Sturgeon Caviar: The Complete Beginner's Guide

Sturgeon caviar is salted roe from fish in the sturgeon family. It is one of the best-known luxury seafood products, but choosing good caviar is easier when you focus on the species, pearl size, texture, flavor, handling, and freshness rather than on a famous name alone.

Paddlefish roe is different: paddlefish is a related North American freshwater species, but it is not a sturgeon. Paddlefish roe is often sold alongside black caviar because of its dark color and similar serving uses, and it should be identified clearly as paddlefish roe.

What Is Sturgeon Caviar?

Caviar is prepared by separating mature roe from the fish, cleaning the eggs, salting them, and packing them under refrigeration. Many premium products are lightly salted in a malossol style; the exact salt level and processing method vary by producer and product.

Good caviar should have clean aroma, intact pearls appropriate for the species, balanced salt, and a pleasant finish. Pearl size alone does not determine quality.

Why Is Sturgeon Caviar Expensive?

Sturgeon generally require years of farming before females produce mature roe. During that time producers carry the cost of feed, water quality, labor, husbandry, facilities, and quality control. Harvesting, grading, packing, refrigeration, and fast cold-chain shipping add further cost.

Fresh caviar is highly perishable and requires continuous refrigeration. Shelf life depends on the producer, preparation, package, and product label, so the storage instructions supplied with the specific tin should take priority over generic advice.

How Caviar Is Produced

  1. Farming and growth: sturgeon are raised until the roe reaches the appropriate stage of maturity.
  2. Maturity assessment: producers evaluate roe development before harvest.
  3. Harvest and separation: the roe is removed and separated carefully from surrounding tissue.
  4. Cleaning and salting: the eggs are rinsed, drained, salted, and handled gently to protect texture.
  5. Grading and packing: caviar is evaluated for pearl size, color, texture, condition, and flavor, then packed and kept cold.

Main Types of Sturgeon Caviar

Beluga Hybrid (Huso huso × Acipenser baerii): our current farm-raised Beluga Hybrid is clearly identified as a hybrid, not pure Huso huso. It is selected for large pearls, delicate texture, and a creamy buttery character.

Ossetra / Osetra: typically chosen for medium-to-large pearls and a richer buttery, nutty profile. Osetra can vary substantially by farm, grade, and lot.

Sevruga: generally smaller pearls with a firmer pop and a more pronounced briny character.

Kaluga: known in the modern caviar market for large pearls, rich texture, and a clean buttery profile. Exact species or hybrid information should be taken from the product label.

Siberian Sturgeon (Acipenser baerii): medium pearls with a clean, buttery profile and delicate nutty notes.

California White Sturgeon (Acipenser transmontanus): American farm-raised sturgeon caviar with medium-to-large pearls and a mild buttery character.

Hackleback: American sturgeon caviar with smaller dark pearls and a more robust, earthy character.

What About Paddlefish?

Paddlefish roe is included in our Black Caviar collection because customers often shop it alongside dark sturgeon roe. It is a useful lower-price comparison option, but it is not sturgeon caviar and should not be represented as one.

How to Choose Sturgeon Caviar

If you prefer large pearls and a delicate luxury presentation, compare Beluga Hybrid and Kaluga. If you want buttery and nutty complexity, explore Osetra. For a clean approachable sturgeon profile, White Sturgeon or Siberian are good starting points. Choose Sevruga for a stronger briny character or Hackleback for a distinctly American sturgeon style.

How to Serve Caviar

Serve caviar well chilled and keep the tin cold during service. A mother-of-pearl or another non-reactive spoon is a traditional choice. Taste the caviar plain first, then add simple accompaniments such as blini, toast points, potatoes, eggs, or crème fraîche. Dry Champagne, sparkling wine, and chilled vodka are classic pairings.

Storage

Keep caviar refrigerated according to the product label and avoid unnecessary temperature swings. Once opened, keep it cold, minimize air exposure, and consume promptly according to the storage guidance supplied with that specific product.

How to Evaluate Quality

  • Species or hybrid: know what fish produced the roe.
  • Pearl integrity: eggs should arrive in the condition expected for that variety.
  • Texture: delicate and firm are both valid characteristics depending on the caviar.
  • Salt balance: salt should support rather than overwhelm the roe.
  • Aroma and finish: the caviar should smell and taste clean.
  • Cold chain: temperature control matters from packing through delivery.
  • Traceability: species, origin, producer, and handling information are more useful than vague luxury terminology.
