Ikura Roll Recipe: Salmon Roe Sushi Rolls at Home
Ikura can be used in sushi rolls, but salmon roe is delicate and can be crushed by heavy rolling pressure. For home cooks, a practical approach is to make an inside-out roll (uramaki), cut it, and add the ikura on top just before serving.

Ingredients
- 1 1/2 cups short-grain Japanese sushi rice
- Rice vinegar, sugar and salt for seasoning
- 2 sheets nori
- 1/2 avocado, thinly sliced
- 1/2 cucumber, julienned
- 3–4 oz salmon roe
- Soy sauce, wasabi and pickled ginger for serving
How to Make an Ikura Uramaki Roll
- Prepare the rice. Rinse and cook the sushi rice according to package directions. Season gently with rice vinegar, sugar and salt, then cool to room temperature.
- Build the roll. Place nori on a plastic-wrapped bamboo mat. Spread a thin layer of rice over the nori, flip it rice-side down, then add avocado and cucumber.
- Roll gently. Shape the uramaki with even pressure without compressing it excessively.
- Cut. Use a damp, sharp knife and wipe it between cuts.
- Add the ikura last. Spoon salmon roe onto each cut piece immediately before serving so the eggs remain intact and visually prominent.

Chum Salmon Caviar gives a large, attractive egg and mild flavor. Coho Salmon Caviar offers a richer flavor, while Pink Salmon Caviar has smaller eggs that work well when you want a lighter roe layer.

Serving Tips
Assemble the rolls close to serving time. Nori naturally softens as it absorbs moisture from rice and fillings. Keep the roe refrigerated until you are ready to plate, and follow the storage instructions supplied with the specific product.
Ikura Roll vs. Gunkan-Maki
Gunkan-maki places roe on top of a small rice mound wrapped with nori, making ikura the centerpiece. An ikura roll combines roe with other ingredients and gives a more substantial bite. Both are useful formats; the uramaki-topping method is especially forgiving for home preparation.
