  5. Add sardines:
    • Fresh sardines: Add to the pot and simmer gently for 8-10 minutes until cooked through.
    • Canned sardines: Add in the last 3-5 minutes only -- canned sardines are already cooked; extended simmering causes them to fall apart and become mushy. Gently fold them in and heat through.
  6. Finish and serve: Remove bay leaf. Taste and adjust seasoning. Add a squeeze of lemon juice for brightness. Ladle into bowls, garnish with fresh parsley, and serve with crusty bread or steamed rice.

  • Don't skip the aromatics: Properly sautéed onion, garlic, and bell pepper are the flavor base of the stew. Cook until soft and lightly golden before adding anything else.
  • Simmer the base fully before adding sardines: The potatoes should be completely tender before the sardines go in -- this prevents overcooking the fish while waiting for the vegetables.
