Sockeye salmon, due to natural factors, has different fat quality in its body. Generally, the longer the river from the ocean to the spawning lake, the more fat the sockeye has in its body. However, for smoking, it cannot be too fatty, and Global Seafoods uses only sockeye from one particular area in Alaska to ensure the perfect balance of flavor and texture.
Hot Smoked for Perfection
Our Sockeye salmon differs from traditional smoked salmon as it undergoes hot smoking. This process ensures that the salmon is fully cooked while preserving its moist, flaky texture.
Hot smoking accentuates the salmon’s natural flavors, delivering a product that is both luxurious and gratifying. We smoke our Sockeye salmon at a precise temperature of 180°F for several hours, using premium alder wood chips to impart a rich, smoky flavor.
