Black cod, also called sablefish, has rich flesh and soft flakes. This page is the comparison hub: use the overview below to identify the closest alternative, then follow the dedicated two-fish comparison when you need more detail on cooking, substitutions or nutrition context.

Black cod is sablefish, not true cod

Sablefish (Anoplopoma fimbria) is sold under the common name black cod, but it is not Pacific or Atlantic cod. If that naming difference is what you are researching, read Sablefish vs. Cod.

Quick comparison

Fish Typical culinary difference from sablefish Detailed guide
Salmon Distinct salmon flavor; texture and richness vary by species and cut Sablefish vs. Salmon
Tuna Often firmer and meatier; species and cut matter greatly Sablefish vs. Tuna
Pacific halibut Milder, leaner and firmer-flaked Sablefish vs. Halibut
Sea bass The name covers different species, so identify the fish first Sablefish vs. Sea Bass
Trout Generally a different flavor and portion format; species and size matter Compare the exact product and cut

Compare the same cut and preparation

A raw sablefish fillet, smoked fish, canned tuna and a whole trout are not equivalent products. Compare similar serving weights and preparation states. Added oil, sauces, curing and smoking can change the finished meal as much as the species choice.

Cooking and substitutions

Sablefish is soft and rich, so it benefits from gentle handling. Halibut is firmer; tuna steaks can be much denser; salmon varies substantially by species and cut. When substituting fish, match portion thickness and check doneness rather than copying the original cooking time. For sablefish methods, use How to Cook Sablefish.

Nutrition and mercury

Nutrition comparisons should use the same serving weight and raw-or-cooked basis. Mercury advice also depends on the exact species. Use the FDA/EPA Advice About Eating Fish for current categories and serving guidance. For sablefish-specific reference values, see our Sablefish Nutrition Guide.
