Sablefish vs. Cod: Black Cod, Pacific Cod, Flavor & Cooking

May 05, 2023

Black cod is not the same fish as cod

Sablefish, also sold as black cod, is Anoplopoma fimbria. Pacific cod is Gadus macrocephalus; Atlantic cod is another species. The similar market names can be confusing, so read the species and cut on the product listing.

Flavor and cooking comparison

Question Sablefish Cod
What is the eating experience? Rich flesh with soft, delicate flakes A leaner, mild white fish
What dishes can I make? Miso glaze, baked portions, rice bowls or gentle stews Baked portions, battered fish, tacos or chowder
What needs care? Support tender portions when turning or lifting Avoid cooking longer than needed, especially thin portions
Can I substitute one for the other? Yes, with a richer result and gentler handling Yes, with a leaner result; reassess cooking time

Choose for the dish, not a ranking

Use sablefish fillets if you want a rich portion with rice and a simple vegetable side. The miso-marinated black cod and baked sablefish with soy, lemon and ginger recipes are two starting points. For cod and other white-fish options, browse White Fish and check the species in each listing.

Neither fish is restricted to one cooking method. Cod can take a miso glaze; sablefish can go into a stew or taco. Adjust the sauce, support the portions and check doneness instead of copying another fish’s timing. Both can become dry or break apart when mishandled.

Nutrition and value

Sablefish is generally a richer fish and cod a leaner one. Compare nutrition on an equal-weight basis and distinguish raw fish from cooked or smoked products. The sablefish nutrition and mercury guide explains its reference figures and serving guidance.

Compare current package prices, net weights, cut and delivery costs. A fixed price range in a blog can become outdated and may mix whole fish with trimmed fillets.
