Pacific pink shrimp meat is a small, tender seafood ingredient suited to salads, sandwiches and quick meal finishes. The Global Seafoods product is sold frozen, fully cooked and peeled in a 5 lb pack. Thaw it before serving; it does not need the same preparation as raw shell-on shrimp.

Pacific pink shrimp are different from Gulf pink shrimp

The name pink shrimp can refer to different species. The Pacific Northwest ocean shrimp fishery includes Pandalus jordani, while Gulf and South Atlantic pink shrimp include Farfantepenaeus duorarum. Do not use a warm-water species description to identify a Pacific product.

Buying and thawing cooked shrimp meat

Our Pacific pink shrimp meat listing specifies a 5 lb pack and approximately 250–350 shrimp per pound. These petite shrimp suit mixed dishes rather than individual skewers. Keep frozen until needed. Thaw covered in the refrigerator and drain gently without squeezing the meat.

Lemon-dill shrimp salad

For four light servings, combine 1 lb thawed, drained cooked shrimp with 3 tablespoons mayonnaise, 1 tablespoon lemon juice, 1 finely diced celery stalk and 1 tablespoon chopped dill. Taste before adding salt. Spoon into lettuce leaves, split rolls or avocado halves. Keep chilled until serving.

Citrus shrimp cups

Combine 1 lb thawed cooked shrimp with a diced tomato, 2 tablespoons finely chopped red onion, 2 tablespoons lime juice and chopped cilantro. Add jalapeño to taste and serve in small cups or with tortilla chips. This version starts with cooked shrimp; citrus juice is a flavoring, not a replacement for cooking raw seafood.

Garlic-butter pasta or vegetables

Cook pasta or vegetables first. Warm 2 tablespoons butter with 2 minced garlic cloves just until fragrant. Toss with the cooked pasta, a little pasta water, lemon zest and thawed shrimp, warming gently. Avoid a long second cooking that can toughen the shrimp.
