Yellowfin Saku Blocks are a different species, not bluefin. Their rectangular shape can simplify portioning, but a shape or grade label does not establish suitability for raw use.
For this raw recipe, confirm the specific fish's intended use and handling with the supplier. Freezing does not kill all harmful germs. This rice quantity yields about 3 cups cooked. Use about 1–1½ tablespoons per nigiri; you will likely have rice left for a small vegetable roll or another dish. Actual fish yield depends on trimming and slice dimensions.
Instead of nigiri, use the 8 oz fish and about 3 cups cooked, seasoned rice for four nori-outside rolls. Add thin cucumber or avocado strips if desired. Follow the rolling and cutting method in the tuna maki recipe; the bluefin filling replaces its yellowfin.
For a cooked meal, try pan-cooked bluefin with lemon and herbs. Cook to 145°F internally. Cooked, flaked fish can also fill a nori roll with cucumber; it will not have the same texture as raw nigiri.
Offer pickled ginger, cucumber salad or cooked edamame alongside the sushi. Keep sauces light when serving rich belly. Prepare only what you plan to serve, and refrigerate perishable ingredients promptly rather than relying on a blanket storage time for homemade raw sushi.
