Hot or cold
While you can use traditional hot smoked salmon for appetizers, we're going to be focusing on cold smoked salmon today. Smoked salmon lox is very different than hot-smoked salmon, but it's just as tasty when you know how to use it.
What to do with lox
Smoked lox is delicious on bagels with cream cheese. That's a very traditional way to serve it. Mix things up a bit using toasted baguettes or crackers. Alaskan smoked salmon can be used in eggs Benedict instead of Canadian bacon. And it can be used in a delicious smoked sockeye salmon frittata or quiche. Lox is also delicious in rice paper rolls.
What you need for rice paper rolls:
8 oz. Alaska Smoked Salmon, sliced, chunked, or shredded
3/4 cup water chestnuts
3/4 cup shredded carrots
½ cup cream cheese
4 Rice paper rounds (banh trang), rinsed under cold water
Mix the first three ingredients together in a bowl. Add cream cheese to taste. For each roll, lay one-fourth of salmon mixture onto center of one rice paper round; roll up. Eat plain or dip in your favorite sauce.
