How to Smoke Mussels: Steam First, Season & Serve
This recipe steams live mussels first, then adds smoke to the cooked meat. Plan it as one cooking session, with the smoker ready before steaming. For ingredients, see Fresh PEI Mussels; these are live mussels, not canned or pre-smoked mussels.
Ingredients for Four Appetizer Portions
- 2 pounds live mussels in the shell
- ½ cup water for steaming
- 2 tablespoons olive oil
- 1 minced garlic clove
- 1 teaspoon chopped thyme
- 1 tablespoon chopped parsley
- 1 tablespoon lemon juice, added after smoking
- Black pepper to taste
Method
- Keep live mussels refrigerated according to their handling instructions. Discard broken shells and mussels that do not close when tapped. Scrub, rinse and remove beards before cooking.
- Prepare an outdoor smoker at 225°F using its manufacturer's directions and a modest amount of food-smoking wood.
- Bring the water to a boil in a large pot. Add mussels, cover and steam until shells open. Discard those that remain closed. Work in batches if necessary.
- Remove the cooked meat with clean utensils. Toss with oil, garlic and thyme, then spread on a shallow smoker-safe tray. Do not reuse utensils or liquid contaminated by raw shellfish.
- Transfer directly to the prepared smoker and add smoke to taste while keeping the mussels hot. They are already cooked; do not use this step as a substitute for the steaming stage. If you pause preparation, refrigerate promptly, then reheat the chilled cooked mussels to 165°F.
- Finish with lemon, parsley and pepper. Taste before adding salt. Serve promptly.

Soy-Paprika Variation
Replace the thyme with ¼ teaspoon smoked paprika and 1 teaspoon soy sauce. Finish with a little cider vinegar instead of lemon. Add more seasoning only after tasting; soy sauce may also contain wheat.

Frozen mussels may be raw or already cooked. Follow their own package instructions; the live-shell tap test is not a test for frozen shellfish.
