What Makes King Salmon Roe Different?

In Global Seafoods' hands-on experience, Alaska King roe can often be more delicate and softer, while Washington lots can be firmer with a stronger pop and more savory character. Canadian lots may fall between those tendencies. These are practical observations, not universal rules: each lot should be judged on its own condition and processing.
