Alaska Pollock vs Tilapia: Wild vs Farmed, Taste, Nutrition & Cooking

septiembre 29, 2023

Side-by-side comparison of Pollock and Tilapia fillets on a cutting board — showing the white, flaky texture of both fish for a nutritional and culinary comparison

Alaska Pollock vs Tilapia: Wild North Pacific Fish vs Farmed Freshwater Fish

Alaska Pollock and tilapia can both deliver a mild whitefish meal, but they come from very different production systems. Alaska Pollock (Gadus chalcogrammus) is a wild North Pacific marine fish. Tilapia is a group of freshwater cichlid species produced primarily through aquaculture. That wild-versus-farmed distinction is more useful than declaring one fish universally “healthier.”

Taste and Texture

NOAA describes Alaska Pollock as mild tasting with a relatively fine texture. Tilapia is also known for mild flavor. Both can work with bold seasoning, tacos, breading, sauces and simple baking, although fillet thickness and processing affect cooking behavior.

Pollock Nutrition: Use Verified Numbers

NOAA reports that 100 g of raw Alaska Pollock contains 81 calories, 17.18 g protein, 0.8 g total fat and 21.9 mcg selenium. NOAA also identifies Pollock as a good source of omega-3 fatty acids. We avoid unsupported “superfood,” inflammation, weight-loss and fixed EPA+DHA claims because nutrient databases can differ by sample and preparation.

Mercury and FDA Guidance

The FDA/EPA fish-advice chart lists both Pollock and tilapia as “Best Choices.” FDA technical information reports a low average mercury concentration for Pollock. That is useful context, but it should not be turned into a promise that any food presents “no mercury concern” for every person or every consumption pattern.

Sourcing Is the Biggest Difference

U.S. Alaska Pollock is wild-caught and managed as a commercial fishery. NOAA reports that the major assessed Alaska Pollock stocks are not overfished and are not subject to overfishing. Tilapia sustainability depends on the farm, country, production method and certification, so broad statements about all tilapia being good or bad are misleading.

For the Pollock side of that story, see our Alaska Pollock Sustainability Guide.

Which Fish Fits Which Meal?

  • Alaska Pollock: tacos, breaded fillets, fish sandwiches, baking, bowls, soups and chowders.
  • Tilapia: mild preparations where a farmed freshwater whitefish is desired and sourcing meets the buyer's preferences.
  • Either: recipes driven primarily by spices, sauces or toppings.

What We Look for When Buying Pollock

From a seafood-processing perspective, the name of the species is only the beginning. Fillet specification, trimming, glazing, packaging, freezing and cold-chain handling all influence the product a customer receives. That is why our Pollock Buying Guide focuses on the actual frozen fillet rather than generic marketing labels.
