Smoked Tuna Sushi Bowls with Avocado and Nori

These bowls combine seasoned rice, prepared smoked tuna and crisp vegetables without rolling sushi. The base recipe makes two bowls. Add sauce gradually: smoked fish, soy sauce and packaged toppings already contribute salt.

Use prepared smoked tuna labeled ready to eat for this assembly recipe. Flake hot-smoked portions or thinly slice a ready-to-eat cold-smoked product according to its serving directions. Raw tuna needs a separate cooking method and is not a direct substitute here.

Ingredients for Two Bowls

  • 2 cups cooked short-grain rice, measured after cooking
  • 1 tablespoon unseasoned rice vinegar and 1 teaspoon sugar
  • 6–8 oz prepared ready-to-eat smoked tuna
  • 1 avocado, sliced
  • ½ cucumber, sliced or cut into matchsticks
  • ½ cup shredded carrot
  • ¼ cup cooked shelled edamame
  • 1 nori sheet, cut into strips
  • 1 tablespoon sesame seeds and 1 sliced scallion
  • Pickled ginger and sliced radish, optional

Assembly

  1. Cook rice according to the package directions. Measure 2 cups cooked rice and gently mix with vinegar and sugar. If using pre-seasoned vinegar, adjust or omit the extra sugar.
  2. Prepare edamame according to its package. Slice vegetables and keep the fish refrigerated while preparing the other ingredients.
  3. Divide rice between two bowls. Arrange tuna, avocado, cucumber, carrot and edamame over the rice.
  4. Add one of the sauces below, then finish with nori, sesame seeds and scallion. Serve promptly.

Three Sauce Options

  • Soy-ginger: Mix 1 tablespoon soy sauce, 1 teaspoon rice vinegar, ½ teaspoon sesame oil and ½ teaspoon grated ginger.
  • Spicy mayo: Mix 2 tablespoons mayonnaise, 1 teaspoon sriracha and 1 teaspoon lime juice. Adjust the heat to taste.
  • Ponzu: Start with 1–2 teaspoons bottled ponzu per bowl and adjust after tasting. Check the ingredient and allergen label.

Plain-Rice Bowl with Soy and Ginger

For unseasoned rice rather than the sushi-style base, use this variation:

For two: 1½ cups freshly cooked rice, 6 ounces prepared smoked tuna, one avocado, half a cup cucumber, a quarter cup cooked shelled edamame, four sliced radishes and two scallions.

Whisk 1 tablespoon soy sauce, 1 teaspoon sesame oil, 1 teaspoon rice vinegar and 1 teaspoon grated ginger. Divide rice between bowls, arrange the vegetables and tuna on top, and add dressing gradually. Finish with sesame seeds. This bowl uses prepared smoked fish; it is not a raw-tuna poke recipe.

Grain Bowl with Pickled Cucumber and Tahini

A complete weekday meal — the smoked tuna's bold flavor works well against the nuttiness of farro or quinoa, the acidity of quick-pickled vegetables, and the richness of tahini dressing. All components can be made in advance; assemble when ready to eat.

Ingredients (serves 2):

  • 6 oz hot-smoked tuna, flaked
  • 1 cup cooked farro or quinoa
  • Quick-pickled cucumbers: 1 cucumber, thinly sliced + 1/4 cup rice vinegar + 1 tbsp sugar + 1/2 tsp salt; combine and refrigerate for 20 minutes
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp sesame seeds, toasted
  • Tahini dressing: 3 tbsp tahini + 2 tbsp lemon juice + 1 tbsp water + 1 clove garlic (grated) + salt; whisk until smooth
  • Fresh herbs (cilantro, mint, or parsley)

Method: Cook farro or quinoa according to its package directions and measure 1 cup cooked grain. Divide between two bowls. Arrange smoked tuna, pickled cucumbers, avocado, and cherry tomatoes over the farro. Drizzle with tahini dressing. Finish with sesame seeds and fresh herbs. Serve immediately or refrigerate (keep dressing separate) according to the ingredient storage instructions.

Variations

Add diced mango for sweetness or a little prepared seaweed salad. For crunch, try a small amount of crushed wasabi peas or tempura flakes. Replace the rice with cooked cauliflower rice if you prefer that base; the finished bowl's nutrition depends on all ingredients and quantities.

Preparing Ahead

Store components separately and refrigerated, following their package directions. Use freshly cooked rice or properly chilled rice leftovers. Slice avocado and add sauces close to serving. Mixing the ingredients does not give them a new shelf life.
