Ikura Ramen: Salmon Roe as a Finishing Topping
Salmon roe can add a bright briny pop to ramen, but it should be treated as a finishing ingredient rather than cooked in the broth. Assemble the noodles and hot broth first, then add chilled ikura on top immediately before serving.

Ikura Shoyu Ramen for 2
Ingredients
- 4 cups dashi, chicken stock, or a combination
- 3 tbsp soy sauce
- 1 tbsp mirin
- 2 portions ramen noodles
- 2 soft-boiled eggs
- Nori and sliced scallions
- 2–3 tbsp chilled salmon roe per bowl
Method
- Bring the stock to a simmer and season with soy sauce and mirin.
- Cook the noodles according to package directions and divide between bowls.
- Add the hot broth, egg, nori and scallions.
- Add chilled salmon roe last, preferably on the egg, nori or noodles at the surface rather than stirring it through the hot broth.
- Serve immediately.
Why Add Ikura Last?
Direct heat changes the delicate texture of salmon roe. Adding it at the end preserves more of the characteristic pop and keeps its flavor distinct from the broth. There is no need for a rigid temperature or waiting-time rule: simply finish the bowl first and add the chilled roe immediately before eating.
