Where Sturgeon Caviar Comes From Today
Modern caviar is overwhelmingly an aquaculture product. Historical wild Caspian caviar shaped the luxury market, but today buyers are far more likely to encounter farm-raised sturgeon caviar produced in China, Europe, the United States, Uruguay and other aquaculture regions.
This matters because a country name alone does not determine quality. Species or hybrid, farm, maturity, curing, grading, packing and cold-chain handling all influence the finished caviar.

China
China has become a major center of global sturgeon aquaculture and caviar production. Chinese farms produce several sturgeon species and hybrids, including Kaluga-related caviars. China is also a major supplier of caviar to international markets.
Quality should be evaluated at the producer and product level rather than by country stereotype. A well-produced Chinese caviar can occupy the premium market just as caviar from Europe or the United States can.

Italy, France and Other European Producers
Europe is an important farmed-caviar region. Italy and France have established sturgeon aquaculture industries, while countries including Poland, Germany and Bulgaria also contribute to European production.
Different farms work with different species, so “European caviar” is not a single style. Siberian Sturgeon, Osetra and White Sturgeon are among the species buyers may encounter from European aquaculture.

United States
The United States has a long history with sturgeon and caviar and today produces farm-raised White Sturgeon caviar, particularly in California. American buyers also encounter dark roe from Paddlefish, which is a related North American freshwater species but not a sturgeon.

Uruguay
Uruguay has developed sturgeon aquaculture and supplies farm-raised caviar to international markets. Our current Siberian Sturgeon Caviar is identified on its product page with its current origin and production details.
Russia and Iran: Historic Importance vs. Current Supply
Russia and Iran are central to the history of Caspian caviar, but historical reputation should not be confused with the origin of every modern product carrying names such as Osetra, Sevruga or Beluga. Today, species names and traditional caviar terminology can appear on farm-raised products produced outside those countries.
For example, our product called Russian Osetra Caviar uses “Russian Osetra” in reference to the sturgeon species/style; buyers should rely on the current product page for actual sourcing information rather than assume country of production from the name.
How to Read Caviar Origin Claims
- Check the species or hybrid. Osetra, Siberian, White Sturgeon, Sevruga, Kaluga and Beluga hybrids are not interchangeable.
- Separate species name from country of production. A traditional geographic name does not always describe where a modern farmed product was produced.
- Look for current product-level sourcing. Farms and lots can change, so current product information is more useful than an old generic country claim.
- Do not treat Paddlefish as sturgeon. Paddlefish roe can be sold alongside black caviar but comes from Polyodon spathula, not a sturgeon species.
- Evaluate handling as well as origin. Cure, grading, refrigeration and cold-chain handling materially affect the eating experience.
