Grilled Alaska Pollock with Lemon, Garlic & Herbs

Alaska Pollock has a mild flavor and fine texture that works especially well with simple seasonings. This recipe uses lemon, garlic, smoked paprika and herbs without covering up the fish.

Ingredients

  • 4 thawed Alaska Pollock fillets
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme or chopped fresh herbs
  • Salt and black pepper to taste
  • Lemon wedges for serving

How to Grill Alaska Pollock

  1. Thaw and dry the fish. Thaw frozen fillets in the refrigerator, then pat them dry. Removing surface moisture helps seasoning adhere and reduces sticking.
  2. Season. Mix olive oil, lemon juice, garlic, paprika and thyme. Brush over both sides of the fillets and season lightly with salt and pepper.
  3. Prepare the grill. Preheat a clean grill or grill pan and oil the cooking surface. Pollock is a relatively delicate whitefish, so a fish basket, grill mat or well-oiled grill pan can make turning easier.
  4. Cook gently. Grill until the flesh is opaque and separates easily. Cooking time depends on fillet thickness and grill temperature, so use doneness rather than a fixed number of minutes.
  5. Check temperature. FDA guidance for finfish is an internal temperature of 145°F (63°C).
  6. Serve. Finish with lemon and fresh herbs.

What to Serve with Grilled Pollock

Good pairings include roasted potatoes, grilled vegetables, rice, a green salad or cabbage slaw. The cooked fish can also be flaked into tacos or grain bowls.

Why Alaska Pollock Works on the Grill

Alaska Pollock (Gadus chalcogrammus) is a North Pacific whitefish with a mild flavor and relatively fine texture. NOAA describes U.S. wild-caught Alaska Pollock as a sustainably managed fishery. For a deeper look at the species and fishery, see our Alaska Pollock guide and fishery and sustainability guide.

Frozen Pollock Is a Good Fit for This Recipe

There is no need to search for never-frozen Pollock to make a good grilled dish. Properly frozen fish can give consistent quality and makes it easy to keep portions available. Thaw in the refrigerator before grilling. For more buying and storage guidance, see How to Buy Alaska Pollock.

More Ways to Cook Pollock

If grilling is not convenient, Alaska Pollock also works well baked, pan-cooked, breaded or used in tacos and fish sandwiches. See our complete Alaska Pollock cooking guide.
