King Crab Española: Spanish-Style King Crab Recipe
King Crab Española is a Spanish-inspired preparation built around garlic, olive oil, olives, chile, and brandy. The sauce is assertive, so the goal is to coat and accompany the crab without burying its flavor.
This version is written for cooked king crab. If your crab is raw, cook it fully before using it in this finishing sauce. Frozen king crab can be raw or precooked, so check the product description first.
Ingredients
- Cooked king crab legs or leg pieces, thawed if frozen
- Extra-virgin olive oil
- Garlic, thinly sliced
- Crushed red pepper flakes, to taste
- Spanish green olives, pitted and roughly chopped
- Spanish brandy
- Freshly ground black pepper
- Flat-leaf parsley, chopped
- Crusty bread, for serving
1. Prepare the Cooked Crab
Pat the thawed crab dry. Using kitchen shears, cut openings along the shell so the meat is easier to access at the table. Divide long legs into sections if necessary to fit the pan.

2. Build the Garlic-Olive Sauce
Warm olive oil over moderate heat. Add sliced garlic and chile flakes and cook gently until aromatic, watching carefully so the garlic does not burn. Add the olives and black pepper.
3. Add the Brandy Safely
Reduce the heat and keep the pan away from open flame before adding brandy. Pour it into the pan and allow the sauce to simmer so the flavors combine. There is no need to flambé the brandy; intentionally igniting alcohol adds unnecessary fire risk in a home kitchen.
4. Warm the Crab in the Sauce
Add the cooked crab and spoon the sauce over the shell openings. Cover briefly and warm only until the crab is heated through. Exact heating time varies with leg thickness, starting temperature, quantity, and pan size, so use the condition of the crab rather than a universal minute count.
If you are starting with frozen crab, thaw it safely first for more even heating. See How to Defrost King Crab Legs.
5. Finish and Serve
Transfer the crab and sauce to a platter, add parsley, and serve with bread for the garlic-olive sauce. Lemon can be offered at the table if you want additional acidity.
Choosing King Crab for This Recipe
Large shell-on legs create the most dramatic presentation, while leg pieces can be easier to fit in a skillet. Red and golden king crab are different species, but either can be used when the product format suits the dish.

What to Serve with King Crab Española
Crusty bread is useful for the sauce. Roasted potatoes, a green salad, grilled vegetables, or rice can make the dish a full meal. If serving wine, choose according to your own preference and the amount of garlic, chile, and olive in the finished sauce.
