Portuguese Sardine Chowder Recipe: A Nutritious and Sustainable Seafood Delight

Sardine chowder is less common than clam or salmon chowder but has a strong case for being better. The sardine’s fat enriches the broth naturally, reducing the amount of cream needed, and the fish’s pronounced flavor survives the chowder’s cooking process in a way that milder fish cannot. This is a cream-based, potato-forward chowder in the New England tradition adapted for sardines. Serves 4–6; ready in 40 minutes.

Ingredients

Base: 2 tbsp butter or good olive oil — 1 medium onion, finely diced — 2 celery stalks, diced — 2 medium carrots, diced — 3 garlic cloves, minced — 1 tsp smoked paprika — 1/2 tsp dried thyme — salt and black pepper.

Chowder body: 4 cups fish stock (preferred) or good vegetable stock — 2 medium waxy potatoes (Yukon Gold preferred; waxy potatoes hold their shape in chowder where starchy potatoes like Russets become mushy), peeled and cut into 1/2-inch dice.

Fish and cream: 2 tins (4–5 oz each) Portuguese sardines in olive oil, drained — 3/4 cup heavy cream (do not substitute evaporated milk — it will curdle at a simmer) — or 1 cup full-fat coconut milk for a dairy-free version (see Step 4 note).

To finish: 1 tbsp fresh lemon juice — fresh flat-leaf parsley, finely chopped — optional: oyster crackers, croutons, or crusty bread.

Method

Step 1 — Build the aromatic base. Heat butter or olive oil in a heavy Dutch oven or large pot over medium heat. Add onion, celery, and carrots; cook 6–8 minutes until soft and the onion is translucent. Add garlic; cook 2 minutes until fragrant. Add smoked paprika and thyme; stir 30 seconds. Season with salt and pepper.

Step 2 — Add stock and potatoes. Pour in fish stock; stir to incorporate the aromatics. Add diced potatoes. Bring to a simmer (not a rolling boil — hard boiling breaks up the potato dice and muddies the broth). Cook 15–18 minutes until potatoes are just tender when pierced with a knife.

Step 3 — Adjust consistency if needed. For a thicker chowder: remove 1 cup of the potato-stock mixture, blend it smooth, and stir back in. This produces a controlled, smooth thickening without lumps. Alternatively, mash some potato pieces directly in the pot for a more rustic texture. Taste the broth and adjust salt at this point before adding the sardines and cream.

Step 4 — Add sardines and cream. Reduce heat to low. If using heavy cream: stir in cream, then gently nestle sardine pieces into the chowder. Simmer gently 4–5 minutes — do not boil after adding cream (boiling can cause the cream to break and produce a greasy surface). If using coconut milk: add the sardines first; simmer 3 minutes; then stir in coconut milk and remove from heat immediately. Coconut milk separates and becomes grainy if simmered for more than 1–2 minutes — it only needs warming, not cooking.

Step 5 — Finish and serve. Stir in fresh lemon juice — the acid brightens the cream base and lifts the sardine flavor. Taste and adjust salt. Ladle into bowls; garnish generously with parsley. Serve with crusty bread, garlic toast, or oyster crackers.

Variations

Corn chowder version: Add 1 cup fresh or frozen corn kernels with the potatoes in Step 2. Corn’s sweetness counterbalances the sardine’s brininess effectively. Smoky version: Render 2 oz diced pancetta or bacon in the pot before Step 1; remove and reserve for garnish. Use the rendered fat in place of the butter. The smokiness amplifies the smoked paprika in the base. Portuguese-style (caldo): Replace 1 cup of the stock with dry white wine; add 1 tsp sweet pimento paste (massa de pimentão) with the garlic; reduce cream to 1/4 cup. This produces a lighter, more brothy result closer to traditional Portuguese fish soups.
