Sardine Curry Recipe: A Spicy and Healthy Delight for Seafood Lovers

Sardines are one of the best fish for curry. Their natural fat content and pronounced flavor hold up to heavy spicing in a way that delicate white fish cannot — they don’t fall apart in the sauce, and the brininess they contribute functions like a seasoning, reducing the salt the sauce needs. The coconut milk base tempers the sardine’s intensity without masking it. This recipe is built around the South Indian and Sri Lankan sardine curry tradition, adapted for a wider pantry. Ready in 30 minutes. Serves 4.

Why blooming the spices matters

Step 2 calls for cooking the dry spices in oil for 60 seconds before adding liquid. This is not optional — the aromatic compounds in cumin, coriander, and turmeric are fat-soluble, not water-soluble. Blooming in hot oil converts them into a form the sauce can carry throughout the dish. Spices added directly to a liquid sauce taste flat, powdery, and raw by comparison. The 60-second window is also when the spices are most likely to burn — watch the heat and stir constantly during this step.

Ingredients

Fish: 12 oz sardine fillets, fresh or frozen (skin-on is fine; the skin softens in the sauce) — or 2 tins (4–5 oz each) canned sardines in olive oil, drained.

Curry base: 1 tbsp coconut oil — 1 medium onion, finely diced — 4 garlic cloves, minced — 1-inch piece fresh ginger, grated — 2 medium tomatoes, diced (or 1 cup canned diced tomatoes) — 1 can (14 oz) full-fat coconut milk.

Spices: 1 tbsp curry powder — 1 tsp ground cumin — 1 tsp ground coriander — 1/2 tsp ground turmeric — 1/2 tsp chili flakes (adjust to heat preference) — 1/2 tsp black mustard seeds (optional but traditional) — salt to taste.

To finish: fresh cilantro, lime wedges, steamed basmati rice or warm naan.

Method

Step 1 — Sauté aromatics. Heat coconut oil in a wide, heavy saucepan over medium heat. If using mustard seeds, add them first and cover briefly — they will pop within 30–60 seconds; once popping slows, add the onion. If not using mustard seeds, add onion directly. Cook 5–6 minutes until soft and beginning to color at the edges. Add garlic and ginger; cook 2 minutes until fragrant.

Step 2 — Bloom the spices. Add curry powder, cumin, coriander, turmeric, and chili flakes. Stir constantly and cook 60 seconds over medium heat — the mixture will become very fragrant and the spices will darken slightly. If the pan is too hot and the spices begin to scorch, add 1 tbsp of the tomato liquid immediately to arrest the heat. The spices should smell toasted and aromatic, not bitter or burnt.

Step 3 — Build the sauce. Add diced tomatoes; stir to incorporate with the spice base. Cook 4–5 minutes, pressing tomatoes down with the spoon, until they break down and the mixture tightens into a thick paste and the oil begins to separate at the edges (this “oil release” is the signal that the tomatoes are properly cooked out and the sauce base is ready). Pour in coconut milk; stir to combine. Bring to a gentle simmer; cook 5 minutes until the sauce thickens slightly. Taste and season with salt.

Step 4 — Add the sardines. Fresh or frozen fillets: nestle gently into the sauce; spoon sauce over the top. Simmer 4–5 minutes undisturbed until the fish is just cooked through and flakes when pressed. Do not stir — the fillets will break apart. Canned sardines: nestle drained fillets into the sauce; simmer 2–3 minutes only — they are already cooked and only need to warm through and absorb the sauce. Over-simmering canned sardines produces a pasty, grainy texture.

Step 5 — Serve. Ladle over basmati rice or serve with naan. Garnish with cilantro and a squeeze of fresh lime — the acid from the lime is a functional finish that brightens the coconut milk sauce, not just a garnish. Squeeze over just before eating, not before serving to the table.

Variations

Keralan-style: Add 10–12 fresh or frozen curry leaves with the mustard seeds in Step 1; reduce chili flakes to 1/4 tsp and add 2 dried Kashmiri chilies for color without as much heat. The curry leaves are not optional in this version — they’re the defining flavor. Sri Lankan-style: Use 2 tbsp of Sri Lankan roasted curry powder (darker and more complex than standard curry powder, with roasted coriander and fennel); add 1 tsp fenugreek seeds at Step 2 and 1 tbsp tamarind paste at Step 3 for a more sour, complex sauce. Make-ahead: The curry base (through Step 3) can be made up to 3 days in advance and refrigerated; add the sardines only when reheating to serve.
