Sardine Fritters Recipe: A Crispy, Delicious, and Healthy Appetizer

Sardine fritters are one of the better uses for a tin of Portuguese sardines if you want to serve them to guests who are hesitant about the fish in its unmodified form. The batter masks the visual, the frying mellows the brininess, and the result — crispy exterior, moist interior, with the sardine’s fat carrying the herbs and garlic through the batter — works well as a passed appetizer or a plated starter. The recipe works with canned or fresh sardines. Makes approximately 12 fritters; serves 4 as an appetizer.

Ingredients

Batter: 1 cup all-purpose flour — 1/4 cup fine cornmeal (adds texture; omit and replace with flour for a softer fritter) — 1/2 tsp baking powder — 1/2 tsp smoked paprika — salt and black pepper — 1/2 cup whole milk — 1 large egg, beaten.

Mix-ins: 1 tin (4–5 oz) Portuguese sardines in olive oil, drained and flaked — 1/4 cup fresh flat-leaf parsley, finely chopped — 3 green onions, thinly sliced — 1 garlic clove, minced or grated — optional: pinch of chili flakes, 1 tsp lemon zest.

Frying: neutral high-smoke-point oil (grapeseed, avocado, or refined sunflower) to a depth of 1/2 inch in a wide skillet.

To serve: lemon wedges, quick garlic aioli (recipe below).

Method

Step 1 — Make the batter. Whisk together flour, cornmeal, baking powder, paprika, salt, and pepper in a bowl. Add milk and beaten egg; stir until just combined — a few small lumps are fine. Do not overmix: working the batter develops gluten in the flour, which toughens the fritter. Rest the batter 5 minutes while you prepare the oil and mix-ins.

Step 2 — Fold in the sardines. Drain sardines thoroughly — excess oil in the batter will cause spattering and uneven browning. Flake into pieces roughly the size of a thumbnail; not crumbs, not large chunks. Fold sardines, parsley, green onion, and garlic into the batter with a spatula, 4–5 folds only. Some sardine pieces should remain visible in the batter rather than being completely incorporated.

Step 3 — Heat the oil. Heat oil in a wide, heavy skillet over medium-high to 350–375°F. Use a thermometer if available. Without a thermometer: insert a wooden chopstick or skewer into the oil — if bubbles form vigorously around it immediately, the oil is at temperature. The “drop of batter” test is less reliable (batter sinks before the oil is hot enough to indicate temperature accurately). Do not fry below 350°F: the fritters absorb oil rather than searing and will be greasy.

Step 4 — Fry. Drop rounded tablespoons of batter into the oil; do not crowd (leave at least 1 inch between fritters — crowding drops the oil temperature and produces steaming rather than frying). Flatten each slightly with the back of the spoon. Fry 2–3 minutes undisturbed until the underside is deep golden brown and the edges are set. Flip; fry 2 minutes until the second side matches. Transfer to a wire rack or paper towels. A wire rack is preferable to paper towels — paper traps steam under the fritter and softens the bottom crust; a rack allows air circulation on all sides.

Step 5 — Serve immediately. Sardine fritters lose their crispness within 10–15 minutes of frying as steam from the interior migrates to the crust. Serve with lemon wedges and garlic aioli.

Quick garlic aioli (5 minutes)

1/2 cup good mayonnaise — 1 small garlic clove, grated on a Microplane — 1 tsp fresh lemon juice — 1/2 tsp Dijon mustard — salt to taste. Stir to combine. Can be made up to 3 days ahead and refrigerated. For a lighter version, replace half the mayonnaise with Greek yogurt.

Fresh sardine variation

Pan-fry or steam 2–3 whole fresh sardines (gutted, scaled) until just cooked through. Cool to room temperature; remove skin and any visible bones; flake the flesh. Use in place of the tinned sardines — the flavor will be cleaner and less briny than tinned. Do not use the cooking oil from the fresh sardines in the batter (too much fat).

Gluten-free version

Replace all-purpose flour with a 1:1 gluten-free baking flour blend (one that includes xanthan gum for structure). The cornmeal is naturally gluten-free. Rest time after mixing increases to 10 minutes to allow the GF blend to hydrate fully. The fritter will be slightly denser but structurally sound.
