Taste & Texture
Pacific Whiting has a clean, mild flavor with a delicate, soft-flaking texture. It is more tender than many firmer whitefish, so shorter cooking times and gentle handling usually give the best results. It works well baked, pan-fried, broiled, in fish tacos, soups, fish cakes, and other everyday whitefish dishes.
How to Prepare Pacific Whiting
Thaw in the refrigerator before preparation. Because this product is HGT rather than a ready-cut fillet, portion or fillet the fish as desired before cooking.
Bake: Season with lemon, herbs, and olive oil and cook until the fish is opaque and flakes easily.
Pan-fry: Portion or fillet, pat dry, season, and cook quickly over medium-high heat.
Broil: Brush with oil or butter and monitor closely because the delicate flesh cooks quickly.
Fish tacos or fish cakes: Cook first, then flake the meat and remove any remaining bones before serving.
Food-safety note: Cook finfish to an internal temperature of 145°F (63°C), or until the flesh is opaque and separates easily with a fork.
Storage
Keep frozen at 0°F (-18°C) or below until ready to use.
Thaw safely in the refrigerator.
After thawing, keep refrigerated at 40°F (4°C) or below and use promptly, ideally within 1–2 days.
For best eating quality, avoid unnecessary thawing and refreezing.
