This recipe works with sturgeon fillet portions or trimmed sturgeon steaks. The exact cooking time depends on thickness, so use an instant-read thermometer and cook the thickest edible portion to 145°F.
Ingredients
Four sturgeon portions, approximately 5–7 oz each
¾ teaspoon kosher salt
¼ teaspoon black pepper
1 tablespoon neutral high-heat cooking oil
2 tablespoons unsalted butter
2 garlic cloves, lightly crushed or minced
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 tablespoon chopped parsley, dill, or thyme

A heavy stainless-steel or cast-iron skillet produces strong browning and enough fond for a quick pan sauce. A quality nonstick skillet is easier for a first attempt but may create less browning. Whatever the pan, preheat it before adding the fish and avoid crowding.
Prepare the Fish
If frozen, thaw the sturgeon completely in the refrigerator.
Inspect each hand-cut portion and remove any remaining cartilage or connective tissue as appropriate.
Pat every surface thoroughly dry with disposable towels.
Season with salt and pepper shortly before cooking.
Keep portions similar in thickness so they finish at approximately the same time.

How to Pan-Sear Sturgeon
Place the skillet over medium-high heat and allow it to preheat.
Add the neutral oil. When it is hot and shimmering, place the dry sturgeon portions in the pan with space between them.
Leave the fish undisturbed until the first surface is browned and releases naturally, usually about 3–4 minutes depending on thickness and pan temperature.
Turn carefully with a thin spatula or tongs.
Reduce the heat to medium. Add butter and garlic.
Tilt the pan slightly and spoon the foaming butter over the fish as the second side cooks.
Check the center with an instant-read thermometer. Cook to 145°F in the thickest edible portion.
Transfer the fish to warm plates and rest briefly while finishing the sauce.
Very thick steaks may brown before the center reaches temperature. Reduce the heat and cover briefly, or transfer an oven-safe skillet to a moderate oven to finish without scorching the exterior.
Quick Lemon-Garlic Pan Sauce
Lower the heat after removing the fish. Add lemon juice and capers, if using, to the butter and browned bits in the pan. Stir for 20–30 seconds, remove from the heat, and add lemon zest and fresh herbs. Spoon the sauce over the cooked sturgeon immediately.
If the garlic has become dark or bitter, do not incorporate it into the sauce. Garlic should be fragrant and lightly golden, not burned.
