  • 1 lb sushi-grade Ahi tuna
  • 2 cups sushi rice
  • 2 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 sheets of sushi nori
  • 1/2 cucumber, sliced into thin strips
  • 1 avocado, sliced
  • 1/4 cup pickled ginger
  • Wasabi, for serving
  • Soy sauce, for serving

  1. Rinse the sushi rice in cold water until the water runs clear. Then, cook the rice according to the package instructions.
  2. In a small bowl, whisk together the rice vinegar, sugar, and salt. Once the rice is cooked, transfer it to a large bowl and add the vinegar mixture. Stir gently to combine.
  3. Lay a sheet of sushi nori on a bamboo sushi mat with the shiny side facing down.
  4. Wet your hands with water and spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  5. Lay slices of Ahi tuna, cucumber, and avocado in a line across the center of the rice.
  6. Use the bamboo mat to roll the sushi into a tight cylinder, starting at the bottom and rolling up towards the top.
  7. Once the sushi is rolled, use a sharp knife to slice it into 8-10 pieces.
  8. Serve with pickled ginger, wasabi, and soy sauce.
