Lemon Butter Sauce for White Fish

 SAUCE FOR WHITE FISH

Lemon and butter seem to go hand-in-hand when you think about eating fish. There is a good reason for that. Butter and lemon work in harmony to create a unique and pleasant flavor profile that pairs wonderfully with any type of fish, but we are particularly fond of how it makes all white fish (flounder fillets and pollock fillets,  for example) really stand out. Here is our simple recipe for lemon butter sauce for exquisite white fish. 

Yield This recipe serves 4 – 6 people, depending on how much sauce you use for each piece of fish.

The sauce uses one sauce pan on the stove and a few utensils, while the fish can be cooked in any way you choose.

Ingredients (sauce only)

  • ¼ cup lemon juice, fresh squeezed
  • ½ tsp chopped shallotPinch salt
  • Quarter stick cold butter, cut into several pieces
  • Fresh chopped parsley to taste
  • (optional) chopped almonds for garnish 

Sauce directions

In medium sauce pan over medium heat, add lemon juice, shallot, and salt. Reduce the mixture to about half. Once the lemon juice is reduced to half, add 1 small piece of cold butter to the pan. Lift pan, swirl in a circular motion, allowing butter to fully melt and mix with the sauce before adding the next piece. Repeat until all pieces are incorporated. It should appear slightly thicker and creamy at this stage. Add chopped parsley to taste and let warm for 30 seconds over low heat.

Ingredients (fish-frying style)

Pollock fish
  • 4 – 6 white fish fillets (pollock, flounder, cod), fresh or thawed
  • Salt and pepper
  • Butter

Fish directions

Preheat a medium skillet on medium heat with enough butter to cover the bottom. Lightly salt and pepper each fillet of your chosen fish. Place fish into heated skillet. Cook to an internal temperature of at least 145 ⁰F. Plate your fish, then spoon a generous portion of your sauce over the fish. Garnish with more parsley, if you wish, and chopped almonds. If serving with pasta, the sauce can be used for the pasta as well.
