Treaty tribes participate in Washington salmon fisheries under established co-management systems. Harvest methods, openings and seasons differ among fisheries, so broad claims that all tribal harvest is performed in one particular way or is automatically more sustainable than other managed fisheries are not useful. What matters to roe quality is lawful harvest, responsible fishery management and careful handling after the fish is caught.

Coho and Chinook Roe
Coho and Chinook roe can differ in pearl size, color, membrane texture and flavor. Those characteristics also change with maturity and processing. A later-season egg is not automatically a higher grade: over-mature roe can become more difficult to process and may have a different texture.

Roe quality begins with the condition of the fish and the time and temperature history before processing.
