Ikura Soup Recipe: Japanese Miso Soup with Salmon Roe

Ikura soup is a simple Japanese-style miso soup finished with salmon roe at serving time. The key is to protect the roe’s delicate texture: prepare the soup first, remove it from direct heat, then add the ikura to the bowl just before serving. This keeps the eggs intact and preserves the clean, briny pop that makes salmon roe special.

Ingredients (Serves 2)

  • 3 cups dashi stock — homemade or prepared according to package directions
  • 2–3 tbsp white or yellow miso paste
  • 1 tbsp mirin
  • 1 tsp dried wakame, rehydrated
  • About 100g silken tofu, cubed
  • 2–3 tbsp salmon roe per bowl
  • Sliced green onion for garnish
  • Optional: toasted sesame seeds or a few drops of sesame oil

How to Make Ikura Miso Soup

1. Prepare the Dashi

Use homemade dashi or prepare instant dashi according to the package directions. Bring it to a gentle simmer rather than a hard boil.

2. Add Tofu and Wakame

Add the tofu and rehydrated wakame and warm for 1–2 minutes.

3. Add the Miso

Remove the pot from direct heat. Dissolve the miso in a small ladleful of hot broth, then stir it back into the soup. Add the mirin and taste before adding more miso. Keeping the soup below a hard boil after the miso is added helps preserve its aroma and cleaner flavor.

4. Add Ikura at Serving Time

Place the salmon roe in each serving bowl and ladle the hot soup over or around it immediately before serving. Do not simmer the roe in the pot. Prolonged direct heat can toughen or rupture the eggs and reduce the texture contrast that makes this dish appealing.

Frequently Asked Questions

Should I cook the ikura in the soup?

No. Add it at serving time rather than simmering it in the pot. Direct heat can change the texture and cause some eggs to rupture.

Can I use instant dashi?

Yes. Instant dashi is convenient and works well for this recipe. Taste the broth before adding extra miso because prepared dashi products can vary in saltiness.

How much ikura should I use?

About 2–3 tablespoons per bowl gives a generous topping without overwhelming the broth.

Can I use different salmon roe species?

Yes. Chum, coho and pink salmon roe all work. Choose based on the egg size, firmness and flavor you prefer.
