Grilled Albacore Tuna: Two Simple Recipes
Albacore's mild flavor works with herbs, citrus and garlic butter. This guide is for portioned fish, with a hot area of the grill for browning and a cooler area for finishing. Choose one of the two seasoning options below.
Choose and Prepare Your Fish
Each recipe serves two using two albacore portions of about 6–8 oz each and roughly 1 inch thick. Similar thickness helps the pieces cook evenly; cooking time still depends on the grill and starting temperature.

Thaw frozen fish in the refrigerator according to package directions, including any instructions about opening or removing wrapping. See the albacore storage guide. Pat portioned fish dry before seasoning. Color alone cannot establish freshness or safe handling.
Recipe 1: Lemon-Herb Grilled Albacore
Ingredients for Two
- 2 albacore portions, 6–8 oz each
- 1 tablespoon neutral cooking oil
- 1 tablespoon chopped fresh thyme
- 1 teaspoon finely chopped fresh rosemary
- 1 teaspoon finely grated lemon zest
- Salt and black pepper to taste
- Lemon wedges and chopped parsley for serving
Lightly coat the fish with oil and season with salt and pepper. Combine the herbs and lemon zest; press a little onto the fish, reserving some in a clean dish for serving. Grill using the method below, then finish with the reserved herbs and lemon wedges. Add lemon juice at serving for a bright finish.
Recipe 2: Garlic-Butter Albacore
Ingredients for Two
- 2 albacore portions, 6–8 oz each
- 1 tablespoon neutral cooking oil
- 2 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1 tablespoon chopped parsley
- Salt and black pepper to taste
- Lemon wedges, optional
Pat the fish dry, coat lightly with oil and season. Grill using the method below. Separately, melt the butter in a small skillet over medium-low heat. Add garlic and stir until fragrant without browning it. Remove from the heat, stir in parsley and spoon over the cooked fish on clean plates.

Grilling Method
- Preheat and clean the grill. Set up a hotter area for browning and a cooler area for finishing, following the equipment instructions. Have a clean serving platter and food thermometer ready.
- Place the lightly oiled portions on the hot area with space between them. Let the first side brown and release from the grate before turning carefully with a fish spatula.
- Brown the second side. If herbs or the surface begin to scorch before the center cooks, move the fish to the cooler area and continue more gently.
- Check the thickest part with a thermometer, inserting from the side when useful. Cook to 145°F internally. Minutes per side and grill marks cannot confirm the temperature at the center.
- Transfer to clean plates, add the selected finishing ingredients and serve promptly. Slice across the grain if serving the fish in strips.
FoodSafety.gov recommends 145°F for fish, including tuna. A brief sear can leave the center undercooked; it is not equivalent to the cooked preparation described here.
Keep the Surface Browned Without Scorching
- Dry the surface: excess moisture makes browning harder.
- Adjust the heat: use the cooler area when the outside is coloring faster than the center cooks.
- Check early: thinner portions need earlier temperature checks; do not use a fixed time for every cut.
- Add butter after grilling: the garlic-butter sauce is a finishing sauce, not a coating for direct high heat.
If you choose a marinade instead, keep the fish refrigerated and reserve a clean portion before it touches raw fish. Acid affects texture, so follow the specific recipe rather than treating ten minutes as a universal limit.
Sides and Leftovers
Serve with grilled asparagus, rice, couscous or an arugula salad. For a complete salad with measured dressing, try grilled albacore salad with lemon-Dijon dressing.
Refrigerate leftovers promptly. If reheating, heat to 165°F internally, using gentle heat with a little liquid as needed; a fixed one- or two-minute warming time does not establish that temperature. Properly stored cooked and chilled fish can also be used in albacore salad and sandwiches.
