What is Hamachi?
Hamachi Collar comes from the Yellowtail jackfish. Yellowtail is similar to tuna but is not confused with yellowfin. They have a distinguishable yellow stripe down their body and, of course, a yellow tail.
Hamachi is native to the Pacific coastal waters and can be fished all year long. Yellowtail jackfish are the more delicate and tastiest in the jack family and favorite for sushi and sashimi.

The collar cut runs along the fish's collarbone behind the gills. The fish collar runs from top to bottom and includes the incredibly delicious meat from along the belly.
