Grilled Alaska Pollock with Lemon, Garlic & Herbs
Alaska Pollock has a mild flavor and fine texture that works especially well with simple seasonings. This recipe uses lemon, garlic, smoked paprika and herbs without covering up the fish.

Ingredients
- 4 thawed Alaska Pollock fillets
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme or chopped fresh herbs
- Salt and black pepper to taste
- Lemon wedges for serving
How to Grill Alaska Pollock
- Thaw and dry the fish. Thaw frozen fillets in the refrigerator, then pat them dry. Removing surface moisture helps seasoning adhere and reduces sticking.
- Season. Mix olive oil, lemon juice, garlic, paprika and thyme. Brush over both sides of the fillets and season lightly with salt and pepper.
- Prepare the grill. Preheat a clean grill or grill pan and oil the cooking surface. Pollock is a relatively delicate whitefish, so a fish basket, grill mat or well-oiled grill pan can make turning easier.
- Cook gently. Grill until the flesh is opaque and separates easily. Cooking time depends on fillet thickness and grill temperature, so use doneness rather than a fixed number of minutes.
- Check temperature. FDA guidance for finfish is an internal temperature of 145°F (63°C).
- Serve. Finish with lemon and fresh herbs.
What to Serve with Grilled Pollock
Good pairings include roasted potatoes, grilled vegetables, rice, a green salad or cabbage slaw. The cooked fish can also be flaked into tacos or grain bowls.
