  3. Place the salmon fillet skin-side down on a large piece of plastic wrap.

  6. Refrigerate the salmon for 24-48 hours, depending on your desired level of curing. The longer you cure the salmon, the firmer and saltier it will become.
  7. After the desired curing time, unwrap the salmon and rinse it under cold water to remove any excess curing mixture.
  8. Pat the salmon dry with paper towels and slice it thinly at an angle. Serve on a bagel, with cream cheese, red onions, capers, and a squeeze of fresh lemon juice.
