Albacore offers a mild flavor and lighter flesh than many other tuna choices. Start with the product format and your intended preparation: a whole fish, a prepared cut and drained canned tuna require different work before they become a sushi filling.

- Intended use: for raw sushi, ask about the specific product's handling and suitability for that preparation. Do not infer a freezing protocol from a grade name.
- Source: ask about the actual fishery, harvest method and any certification claimed for that product rather than assuming all albacore shares one sourcing rating.
Color alone cannot establish freshness. A normal appearance or clean smell is not proof that a fish is suitable for raw service. A “sushi-grade” label and frozen condition also do not guarantee safety.
