Coho and Silver Salmon Are the Same Fish

Whole Fish vs. Fillet Portions
Choose the whole fish when you want to butcher, fillet, cut steaks, use the collar or head, or control portion size yourself. Choose fillet portions for convenient individual servings with minimal preparation.
Flavor and Texture
Coho has a clean salmon flavor and a moderately firm texture that works across grilling, baking, pan-searing and roasting. It is generally less rich than king salmon and more moderate in flavor than sockeye.
