Albacore Tuna Ceviche with Tomato and Citrus

This citrus-dressed recipe uses albacore's mild flavor with tomato, red onion and cilantro. It serves four as an appetizer using 1 lb prepared fish. Allow about 25–30 minutes with thawed, portioned fish.

Citrus Changes Texture, Not Raw Status

Lime and lemon juice firm the surface of fish through acid denaturation. Ceviche remains a raw preparation; a change in color or texture is not evidence of safe cooking.

For raw preparation, confirm the specific fish's intended use and handling with the supplier. A “sushi-grade” label or freezing alone does not guarantee safety. Ingredients for Four

  • 1 lb prepared albacore suitable for the intended raw use, cut into ½-inch cubes
  • ½ cup fresh lime juice
  • ¼ cup fresh lemon juice
  • ½ small red onion, thinly sliced
  • 1 medium tomato, seeded and diced
  • ¼ cup chopped cilantro
  • 1 small jalapeño or serrano, minced, optional
  • Salt and pepper to taste

Method

  1. Prepare vegetables and a clean glass or food-safe stainless-steel bowl. Keep tuna refrigerated until ready to dice.
  2. Toss the chilled tuna with lime and lemon juice. Cover and refrigerate for about 10 minutes as a starting point for texture. Timing varies with cube size and citrus; it is not a safety threshold.
  3. Fold in onion, tomato, cilantro and optional chili. Spoon off excess liquid if desired, then season lightly.
  4. Divide among four small bowls or serve on tostadas just before eating. Keep the remaining mixture chilled while plating.

Variations and Accompaniments

Add diced avocado just before serving, or try cucumber for crunch and mango or pineapple for sweetness. Cooked corn and sweet potato are another serving option. Orange juice can replace a small part of the citrus for a sweeter dressing; adjust flavor without treating acidity as a safety control.

Cooked-Fish Variation

Cook albacore to 145°F internally, cool promptly under refrigeration, then combine with the vegetables and add citrus gradually to taste. This produces a cooked tuna citrus salad with a different texture. Do not use a longer raw marination as a substitute for this cooking step.

Frozen Albacore Tuna offers 5 lb and 10 lb total orders. Confirm the cut and intended preparation; those weights are not the recipe portion size. Fresh Whole Albacore needs a separate cutting and yield plan.
