Pan-Seared Bluefin Tuna with Lemon or Soy-Ginger
This page is specifically for pan-searing Bluefin tuna. It is not a general tuna guide and does not substitute Yellowfin or Albacore products.

Ingredients for Two
- 2 bluefin portions, about 6–8 oz each
- 1–2 tsp neutral cooking oil, depending on cut
- Salt and black pepper
- Lemon wedges
Optional Soy-Ginger Finish
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- 1 tsp grated ginger
- ½ tsp sesame oil
Method
- Follow the product's thawing directions and pat the fish dry.
- Season lightly. For fatty belly, use little or no added oil.
- Heat a heavy skillet over medium-high heat. Add the fish when the pan is hot, leaving space around each portion.
- Brown the first side, then turn once. Lower the heat if the outside browns faster than the center cooks.
- For fully cooked fish, continue until the thickest part reaches 145°F. Transfer to a clean plate.
- Finish with lemon, or spoon over the soy-ginger mixture prepared separately in a clean bowl.
A fast sear can leave the center undercooked. If you choose that style, it is a different risk profile from fully cooked fish.

Why the Cut Matters
Otoro is high-fat belly and can render fat into the pan. Leaner bluefin needs more added oil. Dry-aged cuts may brown more readily and should be cooked according to their actual thickness rather than a generic “two minutes per side” rule.
Serving Ideas
Serve with cucumber salad, rice, roasted vegetables or greens with lemon vinaigrette. Keep sauces restrained so the Bluefin remains the focus.
