Marinade for White Fish
We offer five different types of white fish, Pacific cod, halibut, rockfish, flounder, and lingcod. Whitefish marinade recipes help balance the subtle sweetness of and flakey texture of white fish. When you marinate fish, it helps to keep your whitefish moist, especially when you use a fish marinade for baking or a fish marinade for frying.

Pacific Cod Fish Marinade:
When marinating a white fish such as pacific cod, we recommend you follow these two simple tips:
1. Use an oil-based marinade. An oil-based marinade for fish filets will help maintain moisture in your fish. Whitefish can dry out quickly, especially when baking or grilling.
2. Quick Fish Marinade. Thirty minutes in an oil-based fish marinade will help prevent the outside of your fish from drying out too quickly without allowing the acidic ingredients in your fish marinade recipes to start cooking the fish. Unless you're making a ceviche such as Peruvian Raw Fish Marinade, you don't want to leave your fish in the marinade for too long.

Cilantro Lime Fish Marinade:
A lime marinade for fish pairs perfectly with bright, fresh ingredients such as fish tacos with fresh salsa or a fresh heirloom tomato salad.
Ingredients:
- 1/2 Cup of Extra Virgin Olive Oil (EVOO)
- Juice from two limes
- Six cloves of garlic (chopped)
- 1 Bunch of fresh cilantro (chopped)
- 2 Teaspoons of chili lime seasoning
Directions:
- Combine ingredients in a bowl and stir until well combined, or pulse all of the ingredients in a food processor until well combined.
- Pour over your cod fillets and marinate fish for 30 minutes to an hour.
This easy marinade for fish is versatile enough that you can use for most varieties of white fish. For thinner fillets, you may want to marinate for only 30 minutes. If you have thicker fillets, they can withstand this cilantro fish marinade for up to an hour. A cilantro-lime marinade would be excellent as a grilled cod marinade.
Lemon Pepper Fish Marinade:
Citrus and white fish pair nicely together. Whether you plan on grilling your marinated cod filets or baking your fish, lemon marinated cod is always a people pleaser. Try this lemon pepper fish marinated sauce with some lemon pepper broccoli or blistered green beans.
Ingredients:
- 1/4 Cup of EVOO
- Juice from one lemon
- Zest from one lemon
- 2 Cloves of fresh garlic minced
- A teaspoon of fresh ground black pepper
- Salt to taste
Directions:
- Combine all the above ingredients in a bowl. Stir well.
- Pour the fish marinade sauce over your cod or other white fish filets.
- Marinate in the fridge for 30 minutes, turning halfway through.

Citrus Marinade for Fish:
The foundation for this recipe uses orange juice as a fish marinade. The addition of fresh lemon juice and soy sauce creates a sweet and salty marinade that compliments the umami of the fish nicely. Orange marinades for fish pair nicely with white fish, salmon, and even swordfish.
Ingredients:
- 1/2 cup of orange juice, fresh squeezed is best
- Juice from one lemon (reserve the zest)
- One tablespoon of soy sauce
- Three tablespoons of EVOO
- Salt and Pepper to Taste

- Combine the ingredients in a bowl.

White Wine Marinade for Fish:
White wine brings out the subtle sweetness of fish in a way that other marinades cannot. The salty briny flavor of fish combined with the acidity of white wine and vinegar creates a perfect balance of flavors. Serve white wine marinated fish with a side of rice pilaf and a tossed salad for a delicious and healthy meal.
Ingredients:
- 1/3 cup of white wine (Chardonnay or a Sauvignon Blanc)
- Three tablespoons of white wine vinegar
- One tablespoon of EVOO
- One tablespoon of sugar
- One small shallot minced
- Two cloves of garlic minced
- One teaspoon of dried oregano
- One teaspoon of dried basil

Soy Ginger Marinade for Fish:

Ingredients:
- 1/4 cup of soy sauce
- Two tablespoons of honey
- One tablespoon of sesame oil
- One tablespoon fresh lime juice
- 1 Tablespoon of freshly grated ginger
- One green onion sliced
Directions:
- Combine the marinade ingredients in a bowl.
- Pour marinade over fish filets and marinate up to 30 minutes, turning halfway through.
- Cook fish fillets using your desired cooking method. Soy marinated fish fillets broil up beautifully if you choose the broiling method.
Halibut Marinade Recipes:
Halibut is a sweet-tasting white fish, but it is thicker and firmer than cod. With its thicker and firmer texture, halibut can withstand bolder flavors and cooking methods.Tequila Lime Marinade for Fish:
A tequila lime marinade fish recipe is a great way to add some flair to your meal. Tequila lime halibut is excellent by itself, or in fish tacos with fresh vinegar slaw. Don't forget to set aside some tequila for the chef!
Ingredients:
- Juice from four limes.
- 1/3 cup of EVOO
- Two Tablespoons of Tequila (Chefs choice)
- Two cloves of garlic, minced.
- Hot sauce to taste
- Fresh Chopped Cilantro
- Salt and Pepper to Taste
Directions:
- Combine ingredients in a bowl or food processor, season with salt and pepper to taste
- Pour-over four halibut filets (This recipe would work as a cod marinade or a mahi mahi marinade)
- Marinade halibut for up to 1 hour. Marinate other types of mild white fish for only thirty minutes.
- Cook fish using your desired cooking method. A tequila lime marinade would be great as a grilled mahi mahi marinade.
Jerk Fish Marinade:
A jerk marinade is always best when you use fresh ingredients. In a pinch, you can opt for dried herbs and seasonings, but if you have the opportunity to buy fresh ingredients, it's worth the time and effort.
Ingredients:
- Two green onions sliced
- Two sprigs of fresh thyme
- One habanero pepper (finely chopped) (Use more or less depending on your preference for heat)
- Two cloves of garlic minced
- One small onion diced
- One teaspoon of salt
- Black pepper to taste
- One tablespoon of brown sugar
- One teaspoon of allspice
- 1/2 teaspoon of nutmeg
- 1/2 teaspoon of cinnamon
- Four tablespoons of soy sauce
- Two tablespoons of EVOO
- 1/4 cup of vinegar
- 1/4 cup of orange juice
- 1/2 teaspoon of grated ginger
Directions:
- Combine all of the ingredients in a food processor and pulse until smooth.
- Marinate your fish for thirty minutes before grilling. Leave the fish marinade sauce on the fish when you're ready to cook for the best flavor.
- Cook your fish using your desired cooking method. Jerk flavors would make an excellent marinade for white fish such as halibut, which is a thicker and firmer fish.
Mustard Marinade for Fish:
Mustard marinades are one of the best halibut marinades. The combination of white wine, spicy mustard, and cayenne pepper stand up perfectly to hardy halibut fillets. This marinade for halibut would even be a perfect match as a fish kabobs marinade with grilled zucchini, yellow squash, and red onion.
Ingredients:
- One cup of dry white wine. (Sauvignon Blanc or Oak Aged Chardonnay)
- 1/4 cup of EVOO
- Juice from half a lemon.
- Two tablespoons of spicy mustard (spicy brown or Dijon).
- Salt and pepper to taste
- 1/2 teaspoon of cayenne pepper
Directions:
- Combine marinade ingredients in a bowl.
- Pour marinade over halibut filets. Halibut is a heartier fish and can handle a slightly longer marinade time than other types of white fish, up to three hours.
- Cook halibut in the marinade using your desired cooking method. We recommend grilled marinated halibut.
Grilled Halibut Marinade with Soy Sauce:
If you're looking for a sweet marinade that works for a variety of fish types, this soy sauce and brown sugar marinade might be perfect for you. A soy sauce marinade works with white fish, salmon, and even shrimp. Toss some soy-marinated shrimp with some Lo Mein noodles for a delicious shrimp Lo Mein!
Ingredients:
- 1/3 cup of soy sauce
- 1/3 cup of brown sugar
- 1/3 cup of water
- 1/4 cup of EVOO
- Salt and pepper to taste
- Two cloves of garlic minced
Directions:
- Combine all of the ingredients in a bowl. Add your water slowly. You may not need the full 1/3 cup of water. You just enough water to cover your fish fillets in the marinade.
- Marinade your fish for thirty minutes and up to one hour. Do not rinse your fish before cooking.
- Cook your seafood using your desired cooking method. If you're looking for a low-sodium salmon marinade, substitute your soy sauce for low-sodium soy sauce.
For people with dietary restrictions, soy is not a gluten-free salmon marinade since soy sauce contains wheat.
Rockfish Marinades:
Rockfish is a lean white fish with a mild flavor and flakey texture. Some people think that rockfish have a slightly nutty taste, which lends itself to spicy marinades as well as citrus flavors.
Spicy Fish Marinade:
There are many types of fish that take on spicy flavors and do well with them. Shrimp, salmon, and most white fish are all excellent candidates for spicy fish marinades.

- Four cloves of garlic minced
- One habanero pepper diced
- 3/4 teaspoon of salt
- One tablespoon of paprika

- Combine all of the ingredients in a small bowl. This marinade will be more of a wet rub to coat your fish or toss your shrimp.
- Coat your fish and let marinate for thirty minutes to one hour.

Citrus Fish Marinade:
The flavors of orange, lemon, and lime blend beautifully with the savory flavors of seafood. Citrus marinated seafood pairs nicely with rice pilaf or green beans, stir-fries, or fish tacos. The meal possibilities go on when it comes to citrus flavors and seafood. Citrus is not just for white fish, either. Citrus salmon marinades are surprisingly delicious with salmon steaks or salmon fillets. You can even marinate and grill a whole salmon with orange slices placed inside your whole salmon.
Ingredients:
Note: This recipe would work with both lime or orange juices.
- One yellow onion diced
- One tablespoon of freshly grated ginger
- Fresh chopped cilantro
- Three cloves of garlic minced
- Zest of one lime
- Salt and pepper to taste
- 1/4 cup of fresh lime juice
- 1/4 cup of EVOO
- Optional: One teaspoon of fresh minced jalapeno.
Directions:
- Combine all of the ingredients in a food processor and pulse until smooth. Your marinade will come out thick, like a paste.
- Cover fish fillets with marinade and let sit in the fridge for up to one hour.
- Cook your fish using your desired cooking method.
Make this citrus marinade with fresh orange juice and orange zest for a lovely citrus salmon marinade. An orange salmon marinade complete with orange slices and sliced onion baked up in a tin foil pouch makes a beautiful and delicious pouch salmon meal. Feel free to experiment with your salmon orange juice marinade by adding some dice jalapeno pepper to spice things up a bit.
Flounder Marinade:
Flounder is a white fish with a mild flavor and a delicate texture. Flounder cooks up best in the oven or pan-fried.
Indian Fish Marinade:
The spices and flavors of Indian cuisine can take white fish fillets and transform them into culinary masterpieces. From curry to masala, Indian fish marinades will please all of your senses.
Indian Curry Fish Marinade:
Ingredients:
- One small onion diced
- Two cloves of garlic minced
- One tomato, diced
- 1/2 habanero pepper, diced
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon of salt
- Pepper to taste
- 1/2 teaspoon of masala powder
- 1 1/2 tablespoons of curry powder
Directions:
- Blend all of the ingredients into a bowl. You should have enough liquids from the tomato to create a thick paste. If not, add enough water to create a chunky marinade.
- Coat your fish fillets with the marinade and chill in the fridge for one hour.
- Preheat your oven to 350 degrees Fahrenheit
- Transfer your fish and marinade into an oven-safe dish.
- Bake your fish with the marinade until done, about 10-15 minutes.
Lingcod Marinade:
Lingcod is a white fish found off of the west coast of the United States. Lingcod has a mild flavor with a slightly firm texture and large flakes when cooked. Lingcod is a lean fish and does best with an oil-based marinade. Any of our oil-based white fish marinade recipes will work perfectly with lingcod fillets. Try any of our grilled fish marinades for lingcod.
Herb-Marinated Lingcod:
Ingredients:
- One Cup of EVOO
- One teaspoon of salt
- 1/4 teaspoon of pepper
- One tablespoon each: dried oregano, dried basil, dried thyme, and dried rosemary.
Directions:
- Combine all the ingredients into a bowl.
- Coat your fish fillets in the herb marinade and chill in the fridge for 1-2 hours.
- Cook fish fillets using your desired cooking method.
Salmon Marinade Recipes:
Salmon contains high amounts of natural oils, making salmon a great candidate for vinegar and acid-based marinades. Salmon doesn't dry out as quickly as lean white fish. Salmon tastes amazing using a variety of flavor profiles, making it a versatile fish that you can eat over and over.
Balsamic Marinade for Salmon:
The sweet and tangy flavors of a balsamic salmon marinade compliment the salmon fillets very well. Baked balsamic salmon over a bed of rice pilaf and a side of balsamic glazed broccoli turns is a delicious and healthy meal. If you love the flavors of balsamic vinegar, try this balsamic vinegar salmon marinade.
Ingredients:
- 1/4 cup of balsamic vinegar
- 1/4 cup of brown sugar
- 1/2 teaspoon of garlic powder
Directions:
- Mix all of the ingredients in a small bowl.
- Place salmon fillets in a baking dish and pour balsamic marinade over your salmon fillets.
- Chill your salmon in the balsamic salmon marinade for 30 minutes.
- Bake the salmon in the oven at 425 degrees Fahrenheit for 10-12 minutes.
White Wine Salmon Marinade:
Ingredients:
- 1/2 cup of dry white wine (Chardonnay or Sauvignon Blanc)
- Two teaspoons dried dill
- Two cloves of garlic, minced
- Two tablespoons of lemon juice
- 1/4 cup of EVOO
Directions:
- Combine ingredients in a small bowl.
- Arrange salmon fillets in a baking dish and pour white wine marinade over the salmon. Chill in the fridge for up to 1 hour
- Cook salmon using your desired cooking method. White wine marinated salmon grills up nicely over a medium flame.
Asian Salmon Marinade Recipe:
An Asian salmon marinade helps create a healthy and flavorful culinary experience. Serve Asian marinated salmon over a bed of steamed broccoli or green beans for a delicious and health-conscious meal for two. Salmon with an orange juice marinade is a surprisingly pleasant combination of flavors.
Ingredients:
- 1/2 cup of soy sauce
- Two tablespoons of chili sauce
- One tablespoon of freshly grated ginger
- Juice from 1/2 of an orange, plus the zest
- One tablespoon of honey
- Red pepper flakes to taste
- Three scallions, finely chopped
- 1 1/2 tablespoons of sesame seeds
Directions:
- Combine all of the ingredients in a small bowl.
- Place salmon fillets in a baking dish or plastic zip lock bag and pour marinade over the salmon.
- Marinate the salmon in the fridge for up to one hour.
- Bake the salmon in the marinade at 350 degrees Fahrenheit for 15-20 minutes, until slightly opaque in the middle.

Mexican Salmon Marinade:

- Juice from one lime
- One tablespoon of EVOO
- One tablespoon of Chili powder
- Two cloves of garlic, finely minced
- Salt and pepper to taste
Directions:
- Combine all of the ingredients to form a thin paste. Add more lime juice and olive oil if your paste is too thick.
- Drizzle the marinade over the salmon fillets and rub into salmon on all sides.
- Marinate the salmon fillets for 15-30 minutes.
- Pan-sear your salmon fillets for the best flavor.
Mexican salmon marinades are a low carb salmon marinade for those who are following a low carb diet. An oil-based marinade is perfect for a keto salmon marinade.
Jack Daniels Salmon Marinade:
Bourbon marinated salmon is good hot or cold as leftovers. Make extra of this bourbon marinade for salmon, so you have plenty of leftovers for the week ahead.
Ingredients:
- 1/4 cup of brown sugar
- 1/2 cup of soy sauce
- 1/2 cup of pineapple juice
- 1/8 cup of bourbon (adjust up or down according to your personal preference)

- 1/4 cup of vegetable oil
- Salt and pepper to taste
Directions:
- Combine all the ingredients for the bourbon marinade in a small bowl. Adjust salt and pepper to your taste.

Simply mix your mango salsa in with you salmon fillets and refrigerate for up to an hour. Bake your salmon with the mango salmon marinade for a delicious and tropical seafood meal. If you like the flavor of mango salsa, try it as a mango marinade for fish.
Dill Salmon Marinade:
Salmon and dill are classic partners in the seafood world. A dill creme is fantastic drizzled over freshly cooked salmon fillets. Salmon is made even better with this dill salmon marinade.
Ingredients:
- 1/4 cup of olive oil
- One bunch of fresh chopped dill
- Two cloves of garlic minced
- Salt and pepper to taste

- Combine the ingredients into a thin paste and rub all over your salmon fillets.

Black Cod Marinade:

Mahi Mahi Marinade Recipes:
Mahi Mahi is a lean white fish with a slightly sweet flavor. When cooked, mahi mahi has large moist flakes.
Grilled Mahi Mahi with Soy Sauce:
Ingredients:
- 1/3 cup of soy sauce
- 1/3 cup of brown sugar
- 1/3 cup of water
- 1/4 cup of EVOO
- Salt and pepper to taste

Asian Tuna Steak Marinade:
This recipe is one of our favorite marinades for tuna steaks. The combination of tender Ahi tuna with sweet (brown sugar), and spicy (chili sauce) make for a sweet and savory seafood meal.

- Juice from four limes.
- 1/3 cup of EVOO
- Two Tablespoons of Tequila (Chefs choice)
- Two cloves of garlic, minced.

- Salt and Pepper to Taste
Directions:
- Combine ingredients in a bowl or food processor, season with salt and pepper to taste
- Pour-over thawed shrimp
- Marinade shrimp for thirty minutes.

Mediterranean Grilled Shrimp Marinade:
Ingredients:
- One Cup of EVOO
- Juice from two lemons
- One small tomato, diced
- One teaspoon of salt
- 1/4 teaspoon of pepper
- Two tablespoons dried oregano
Directions:
- Combine all the ingredients into a bowl.
- Coat your shrimp in the marinade and chill in the fridge for 1-2 hours.

Mexican Shrimp Marinade:
Ingredients:
- Juice from one lime
- One tablespoon of EVOO
- One tablespoon of Chili powder
- Two cloves of garlic, finely minced

This marinade would make and fantastic shrimp fajita marinade. Substitute the lime for lemon and add two teaspoons of Cajun seasoning, and you have a delicious Cajun shrimp marinade. Add 1/8 teaspoon of cayenne powder for a spicy grilled shrimp marinade.
Citrus Shrimp Marinade:
Shrimp marinated with lemon and garlic pairs perfectly with a scampi pasta and a glass of Pinot Grigo or Chardonnay.
Lemon Garlic Shrimp Marinade:
Ingredients:
- 1/4 Cup of EVOO
- Juice from one lemon
- Zest from one lemon
- 2 Cloves of fresh garlic, minced
- Salt and pepper to taste

- Combine all the above ingredients in a bowl. Stir well.
- Pour the marinade over your shrimp and stir to coat the shrimp.
- Marinate in the fridge for 15-30 minutes, turning halfway through.
- Cook your shrimp using your desired cooking method.
