These Osetra caviar recipes are designed around one principle: prepare the base first and add the chilled caviar immediately before serving. Osetra’s flavor and firm pearls are most noticeable when the dish is simple, lightly seasoned, and not excessively hot.

12 small blini
1/2 cup crème fraîche

2. Potato Rösti With Osetra
Ingredients
2 medium potatoes, grated
1 tablespoon neutral oil
Crème fraîche
Osetra caviar
Chives
Method
Squeeze excess moisture from the grated potatoes.

Add crème fraîche, Osetra, and chives.
3. Chilled Egg and Osetra Canapés
Ingredients
4 hard-boiled eggs
2 tablespoons crème fraîche
Osetra caviar
Dill or chives
Method
Cool and peel the eggs, then cut them into thick slices or halves.
Add a small amount of crème fraîche.

Season the egg lightly because the caviar supplies salinity.
4. Oysters With Osetra Caviar
Ingredients
12 freshly shucked oysters
Osetra caviar
Optional finely diced cucumber
Method
Arrange the oysters securely over crushed ice.
Add a small amount of cucumber if desired.

8 oz tagliolini or angel-hair pasta
2 tablespoons unsalted butter

Osetra caviar
Chives
Method
Cook the pasta until al dente and reserve a little cooking water.

Plate and allow the strongest surface heat to dissipate.
Add Osetra and chives without stirring the pearls into the sauce.

8 large dry-packed sea scallops
