  • 2 lobsters
  • 4 cups of seafood stock
  • 1 cup of heavy cream
  • 1/2 cup of dry sherry

  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of tomato paste
  • 1 bay leaf
  • 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • 1/4 cup of butter
  • Chopped parsley for garnish


  1. Start by boiling the lobsters in a large pot of salted water for 8-10 minutes, or until they turn bright red. Remove them from the pot and let them cool.

  2. Once the lobsters have cooled, remove the meat from the shells and set it aside. Keep the shells and the tomalley (the green substance inside the lobster) for later.

  3. In a large pot, melt the butter over medium heat. Add the onions, carrots, celery, and garlic and sauté for 5-7 minutes, or until the vegetables are soft and fragrant.

  4. Add the tomato paste, bay leaf, thyme, and paprika to the pot and stir well. Cook for an additional 2-3 minutes.

  5. Pour in the sherry and cook for 1-2 minutes, or until the alcohol has evaporated.

  6. Add the seafood stock, lobster shells, and tomalley to the pot. Bring the mixture to a simmer and let it cook for 20-30 minutes.

  7. Remove the pot from the heat and strain the mixture through a fine-mesh sieve, discarding the solids.

  8. Return the bisque to the pot and add the heavy cream and lobster meat. Heat the bisque over low heat until it's warmed through.

  9. Serve the bisque hot, garnished with chopped parsley.
