  • 1 lb fresh lobster meat, chopped

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh parsley

  1. Heat the chicken broth in a saucepan and keep it warm over low heat.
  2. In a separate pan, heat the olive oil and butter over medium heat.
  3. Add the chopped onion and garlic and sauté until the onion is translucent.
  4. Add the Arborio rice and stir for 2-3 minutes until it is coated with the butter and oil.
  5. Pour in the white wine and stir until it is absorbed by the rice.
  6. Begin adding the warm chicken broth to the rice, one cup at a time, stirring constantly until each cup of broth is absorbed before adding the next.
  7. Continue adding broth and stirring until the rice is cooked through and has a creamy consistency. This should take around 20-25 minutes.
  8. Add the chopped lobster meat to the risotto and stir until it is heated through.
  9. Stir in the grated Parmesan cheese, chopped parsley, and season with salt and pepper to taste.
  10. Serve the lobster risotto hot, garnished with chopped parsley and lemon wedges.
