  • 1 lb. Pacific cod fillet, cut into bite-sized pieces

  • 1 red bell pepper, diced
  • 1 can diced tomatoes
  • 3 cups fish stock or chicken broth
  • 1/2 cup white wine
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley


  1. Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the red bell pepper and sauté for another 3 minutes.
  3. Add the diced tomatoes, fish stock or chicken broth, white wine, thyme, oregano, salt, and black pepper to the pot. Bring to a boil, then reduce heat and let simmer for 10 minutes.
  4. Add the Pacific cod pieces to the pot and let simmer for an additional 10 minutes, or until the fish is cooked through and flakes easily with a fork.
  5. Stir in the frozen peas and chopped parsley and let cook for another 2-3 minutes, until the peas are heated through.
  6. Serve hot, with crusty bread on the side.
