Coho Salmon for Family Meals: Nuggets, Patties & Quesadillas

Offer salmon in a few different formats

Baked nuggets, small patties and quesadillas offer different textures without needing a separate fish for each dish. Let diners choose a dip or topping; these recipes do not guarantee that every child will like salmon.

Start with coho fillet portions, thawed according to their package instructions. Remove skin and check carefully for bones. Adapt the finished pieces to the child’s eating abilities and supervise young children while eating.

Baked salmon nuggets

Use 1 lb boneless coho cut into even pieces, 1 beaten egg, ½ cup panko, ¼ cup grated Parmesan, ½ tsp garlic powder and ½ tsp paprika. Mix the crumbs, cheese and seasonings. Dip fish into egg, then coat with crumbs. Arrange on a lightly oiled baking tray.

Bake at 425°F, beginning to check after about 10 minutes. Continue until the largest pieces reach 145°F. Serve with a familiar dip and vegetables. Keep utensils used for raw fish and egg away from the finished nuggets.

Salmon patties

Mix 1 lb fully cooked or drained canned salmon with 1 egg, ½ cup breadcrumbs, ¼ cup grated cheese, 2 tbsp mayonnaise, 1 tbsp Dijon mustard and 1 tbsp chopped parsley. Refrigerate briefly if the mixture needs firming, then form 8–10 small patties.

Cook in a lightly oiled skillet over medium heat, turning carefully, until browned and 165°F in the center. A browned crust alone does not establish that the egg-containing mixture is ready. Serve with vegetables or small buns.

Cheesy salmon quesadillas

Divide ½ cup fully cooked salmon and ¾ cup shredded cheese between two tortillas, placing filling on one half of each. Fold and heat in a skillet over medium-low heat, turning, until the filling is hot and the tortillas are golden. When using refrigerated leftover salmon, heat the center to 165°F. Cut into manageable pieces.

For tacos, use cooked flakes with soft tortillas and separate bowls of avocado, cheese and mild salsa. You can also add cooked salmon to pasta and cheese sauce; describe the ingredient openly rather than promising to hide it.

Child-size portions

The amounts above make family batches, not one child’s serving. FDA/EPA fish advice recommends two weekly servings from Best Choices for children. Average fish portions are 1 oz at ages 1–3, 2 oz at 4–7, 3 oz at 8–10 and 4 oz at age 11. Salmon is included in Best Choices. This is not a rule of one ounce for every year of age.
