Ingredients

  • 12 oz cooked lobster meat, chilled and cut into bite-size pieces
  • 4 split-top brioche or New England-style rolls
  • 2 tablespoons crème fraîche
  • 1 tablespoon mayonnaise
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon finely cut chives
  • 1 tablespoon unsalted butter
  • 1–2 oz Kaluga caviar, chilled
  • White pepper, optional

Instructions

  1. Prepare the lobster: Make sure the cooked lobster meat is well chilled and dry. Remove any shell or cartilage.
  2. Make a light dressing: Combine crème fraîche, mayonnaise, lemon juice, and most of the chives. Use only enough dressing to coat the lobster lightly.
  3. Fold together: Add the lobster and mix carefully so the pieces remain intact. Taste before adding any salt; the caviar will provide salinity.
  4. Toast the rolls: Butter the outside of the rolls and toast them in a skillet until golden. Let them cool until warm rather than hot.
  5. Fill: Divide the chilled lobster mixture among the rolls.
  6. Finish with caviar: Add Kaluga caviar along the top immediately before serving. Garnish with the remaining chives.
