Seared ahi tuna steak with sesame crust and soy glaze – rare center cooking technique

Choose an Ahi Tuna Recipe for Your Meal

Yellowfin tuna can become a pan-cooked steak, a rice bowl, a sushi roll or a noodle dinner. Start with how you want to serve it, then choose the fish format and the recipe. This guide connects the individual recipes so you can compare portions and ingredients before cooking.

Steaks, Saku Blocks or a Poke Kit?

Frozen Yellowfin Steaks and Fresh Yellowfin Steaks suit portioned meals. Yellowfin Saku Blocks provide a trimmed rectangular format for slicing or dicing. Check the specific product's intended use separately from its shape.

The frozen steak and saku listings offer 5 lb and 10 lb total order options. A recipe calling for 12 oz or 1 lb describes its ingredient quantity, not the retail pack. Check inner packaging when planning several smaller meals.

For a seasoned product, compare the kits in Poke and Marinated Seafood. Follow the included sauce instructions and add extra seasoning gradually. Rice, vegetables and garnishes are separate recipe ingredients unless the listing says otherwise.

Sesame-Crusted Steak and Soy-Ginger Sauce

For two 6–8 oz portions, pat the fish dry and press about 2 tablespoons sesame seeds onto the surfaces. Use a little neutral cooking oil and the pan method in the linked cooking guide. Reduce heat if the seeds brown before the center is cooked; do not heat the pan until oil smokes as a required step.

For a separate dipping sauce, combine 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon grated ginger and ½ teaspoon honey. Reserve it in a clean dish for serving. Check labels for soy, wheat and sesame.

Raw, Lightly Seared and Fully Cooked Are Different

Sashimi and raw poke remain uncooked. A briefly seared steak can also have a raw center. A “sushi-grade” label, bright color or freezing alone is not a guarantee of safe raw consumption; confirm the intended use and handling of the specific fish.

FDA recommends cooking most seafood to 145°F internally. Freezing does not kill all harmful germs. Pregnant people, children, older adults and people with weakened immune systems should avoid raw or undercooked seafood. See FDA seafood guidance.

Plan Rice, Sides and Delivery

Prepare rice, vegetables and clean serving utensils before handling raw fish. Keep unused tuna refrigerated and assemble raw bowls close to serving, without putting raw fish onto piping-hot rice. For a cooked dinner, pair tuna with rice, roasted vegetables or a crisp salad.

Frozen orders ship with dry ice; fresh steaks ship chilled with gel ice via UPS Overnight. Read the storage and thawing guide and compare order formats in the tuna buying guide.
