Bluefin Tuna Nigiri at Home

Nigiri pairs a slice of fish with a small oval of seasoned rice. This home recipe makes 16 pieces; serve as a shared appetizer for four or part of a larger sushi meal. The cut matters: lean akami and fatty otoro offer different textures.

Choose the Actual Cut

Yellowfin Saku Blocks are a different species, not bluefin. Their rectangular shape can simplify portioning, but a shape or grade label does not establish suitability for raw use.

For this raw recipe, confirm the specific fish's intended use and handling with the supplier. Freezing does not kill all harmful germs. Ingredients for 16 Nigiri

  • 8 oz prepared bluefin tuna suitable for the intended raw preparation
  • 1 cup uncooked short-grain sushi rice
  • Water according to the rice package or cooker instructions
  • 2 tablespoons unseasoned rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • Soy sauce, pickled ginger and optional wasabi for serving

This rice quantity yields about 3 cups cooked. Use about 1–1½ tablespoons per nigiri; you will likely have rice left for a small vegetable roll or another dish. Actual fish yield depends on trimming and slice dimensions.

Cook and Season the Rice

  1. Rinse and cook rice according to its package rather than applying one water ratio to every variety and cooker.
  2. Dissolve sugar and salt in the vinegar, warming gently if needed. Fold into the cooked rice in a wide bowl without crushing the grains.
  3. Let rice cool enough to handle and no longer be hot before adding raw fish. Prepare it for the meal rather than leaving it out for an extended period.

Slice and Shape

  1. Prepare a clean board, sharp knife and serving plate. Follow the fish's thawing directions, including instructions for opening or removing wrapping. Keep unused fish refrigerated.
  2. Identify the grain and trim tough connective tissue as needed. With smooth drawing cuts across the grain, make 16 slices that will drape over small rice ovals. Aim for roughly ½ oz per piece, adjusting dimensions to the cut.
  3. Lightly dampen clean hands. Shape 1–1½ tablespoons of rice into a small oval with gentle pressure; avoid compressing it into a dense ball.
  4. Add a tiny dab of wasabi if desired, lay a slice over the rice and press gently to hold it in place. Work in small batches.
  5. Arrange on plates and serve promptly with small dipping dishes. Check sauce labels for allergens, including soy and wheat.

Maki Variation

Instead of nigiri, use the 8 oz fish and about 3 cups cooked, seasoned rice for four nori-outside rolls. Add thin cucumber or avocado strips if desired. Follow the rolling and cutting method in the tuna maki recipe; the bluefin filling replaces its yellowfin.

Cooked Alternative and Serving Ideas

For a cooked meal, try pan-cooked bluefin with lemon and herbs. Cook to 145°F internally. Cooked, flaked fish can also fill a nori roll with cucumber; it will not have the same texture as raw nigiri.

Offer pickled ginger, cucumber salad or cooked edamame alongside the sushi. Keep sauces light when serving rich belly. Prepare only what you plan to serve, and refrigerate perishable ingredients promptly rather than relying on a blanket storage time for homemade raw sushi.
