Ikura Omelette: Salmon Roe Breakfast Recipe

An ikura omelette combines softly cooked eggs with chilled prepared salmon roe. The key is to treat ikura as a finishing ingredient: cook the omelette first, remove it from direct heat, then add the roe just before folding or serving.

  • 4 large eggs
  • 1 tbsp unsalted butter
  • 1 small shallot, finely chopped, optional
  • Salt and pepper to taste
  • 1–2 oz prepared salmon caviar (ikura), kept chilled until serving
  • Fresh dill or chives, optional
  • Crème fraîche or avocado, optional

Method

  1. Whisk the eggs with a small pinch of salt and pepper.
  2. Melt butter in a nonstick pan over medium-low heat. If using shallot, cook gently until softened.
  3. Add the eggs and cook gently until mostly set but still tender.
  4. Remove the pan from direct heat.
  5. Spoon chilled ikura over one half, add optional fillings, and fold gently.
  6. Transfer to a plate, garnish, and serve promptly.

Prepared salmon roe is valued for its delicate membrane and characteristic pop. Direct high heat can change that texture, so use it as a finishing ingredient rather than frying it with the eggs.
