Ikura Tacos: Salmon Roe Tacos with Avocado & Lime

Ikura tacos combine warm corn tortillas with cool salmon roe, avocado, red onion, cilantro and lime. The key is to cook and assemble the warm ingredients first, then add the ikura immediately before serving so the roe keeps its texture.

Ingredients

  • 8 small corn tortillas
  • 4 oz salmon roe (ikura)
  • 1 ripe avocado, sliced or lightly mashed
  • 1 small red onion, thinly sliced
  • 1 jalapeño, thinly sliced, optional
  • Fresh cilantro
  • Lime wedges
  • 2 tbsp mayonnaise
  • Sriracha or another chile sauce, to taste
  • Fresh lime juice, to taste

How to Make Ikura Tacos

  1. Mix the mayonnaise with chile sauce and a squeeze of lime.
  2. Warm the tortillas in a dry skillet until pliable and lightly toasted.
  3. Add avocado, red onion and jalapeño.
  4. Drizzle lightly with the spicy lime mayo.
  5. Add chilled ikura as the final topping.
  6. Finish with cilantro and serve immediately with lime wedges.

Choosing the Roe

Chum Salmon Caviar provides large eggs and a pronounced pop. Coho Salmon Caviar can provide a somewhat richer flavor. Lot-to-lot texture and salt level vary, so taste the roe before adding extra salty ingredients.

Can I Prepare Them Ahead?
