The region's signature ingredients (good olive oil, lemon, capers, olives, tomatoes, fresh herbs, garlic) all work as counterweights to the fish's richness: the acidity of tomatoes and lemon cuts through the fat; capers and olives add briny contrast; olive oil amplifies and harmonizes rather than competes. Where Asian cuisine uses miso and soy to create umami glaze, Mediterranean cuisine uses the same fat-soluble flavor principles with different aromatics. Use avocado oil or a neutral high-smoke-point oil for the sear; finish with extra-virgin olive oil for flavor. Pairing: Citrusy arugula salad. Pinot Grigio (Alto Adige) or dry Rosé (Provence).
