Tuna salami is a dry-cured seafood sausage made from fresh tuna and aromatic spices, stuffed into casings, and aged to develop rich umami flavor and firm texture.
Commonly made with yellowfin, albacore, or bluefin tuna, this salami can be enjoyed thinly sliced, like prosciutto or jamón, and makes a perfect addition to seafood charcuterie boards.

Important: Always use curing salt (Prague Powder #2) and maintain proper humidity and temperature control.
2.5 lbs sushi-grade tuna or wild albacore
20g kosher salt
3g Prague Powder #2
5g sugar
Seasonings: black pepper, fennel, garlic, chili flakes
Natural casings (or collagen)
Grind or finely chop the tuna.
Mix with salt, curing salt, sugar, and spices.
Stuff into casings and tie.
Optionally ferment 24–48 hours at 68°F/85% RH.
Hang to dry age at 50–55°F and 75–80% humidity for 3–6 weeks.
Once dry-aged to ~30–35% weight loss, it’s ready to slice and enjoy!
Aging brings out deep, complex flavors. You’ll need:
A curing chamber or modified fridge
Hygrometer to track humidity
3–6 weeks of patience!
