Sablefish with Vegetables: Sheet-Pan Dinner, Green Beans & Salad
Match the vegetable timing to the fish
Dense vegetables often need a head start. Tender greens and tomatoes need less time. Cook each component until ready rather than leaving the fish in the oven while the vegetables catch up.
Use sablefish fillets. The sheet-pan and green-bean dinners below serve four with four portions of about 6 oz each.
Sheet-pan sablefish with zucchini and peppers
Ingredients: four fish portions, 1 zucchini, 1 yellow squash, 1 red bell pepper, ½ red onion, 2 tbsp olive oil, 1 tsp oregano, ½ tsp garlic powder, salt and pepper. Optional: cherry tomatoes and basil.

- Heat the oven to 400°F. Slice squash about ½ inch thick; cut pepper and onion into similar-sized pieces. Toss vegetables with oil and seasonings and spread on a rimmed baking sheet.
- Roast for about 15 minutes, then check tenderness. Give firm vegetables longer if needed.
- Make space for the fish, add the seasoned portions and return to the oven. Begin checking the fish around 12 minutes and cook to 145°F. Remove individual portions as they finish.
- Add cherry tomatoes near the end if using. Finish with basil and serve with rice, couscous or quinoa.
Pan-cooked sablefish with garlic green beans
Use 1 lb trimmed green beans, 3 minced garlic cloves, 2 tbsp olive oil and lemon juice to taste. Cook the beans first in a covered skillet with a small splash of water until nearly tender. Uncover, let excess water evaporate, add half the oil and garlic and cook briefly. Transfer to a serving dish.
Pat the fish dry. Add the remaining oil to the pan and cook over moderate heat, skin-side down if skin is present. Support each portion when turning. Continue to 145°F, reducing heat if the surface browns too quickly. Serve over the beans with lemon.
Roasted sweet potatoes and Brussels sprouts
For two servings, toss 1 cup cubed sweet potato and 1 cup halved Brussels sprouts with 1 tbsp olive oil, smoked paprika, salt and pepper. Roast at 400°F until tender, beginning to check around 25 minutes. Prepare two fish portions separately using the sablefish cooking-method guide. Serve together with lemon. Larger vegetable pieces will need longer.

Grilled vegetables alongside sablefish
Asparagus and tomatoes, or zucchini and peppers, can be grilled separately from the fish. Use a suitable basket for small pieces. Follow our sablefish grilling guide for supporting the portions and managing heat. Finish the vegetables with lemon or a small drizzle of balsamic glaze.
Kale salad with cooked sablefish
For two servings, use two cooked fish portions, 4 cups chopped stemmed kale, ¼ cup toasted walnuts and ¼ cup dried cranberries. Whisk 2 tbsp olive oil, 1 tbsp lemon juice, 1 tsp Dijon and ½ tsp honey. Massage the kale with a little dressing, then add the remaining dressing, nuts and cranberries. Place the cooked fish flakes on top and serve promptly. If preparing ahead, refrigerate the fish rather than leaving it out to cool for an extended period.
Fresh or frozen vegetables?
Both can work. Follow frozen-vegetable package directions and cook separately when their water release or timing makes a shared pan difficult. Avoid crowding the pan; it makes browning harder.

FDA seafood guidance recommends cooking fish to 145°F in the thickest part. Keep fish refrigerated during preparation and follow package thawing instructions. Cooking times are estimates, not a substitute for checking temperature.
