Albacore (Thunnus alalunga) are the fastest-swimming tuna species and the only one whose canned product is legally sold as “white meat tuna” in the US. They are a pelagic, open-ocean species that follow baitfish schools through warm-water corridors and are targeted primarily by offshore trolling. This guide covers where they are, when to find them, how to catch and handle them, and what the quality of the fish you bring home actually depends on.
US West Coast: The primary domestic albacore fishery. Fish migrate from offshore Hawaii and the central Pacific into the California Current zone between June and October. The California Coast (San Diego to Monterey) sees fish from June; Oregon and Washington from July through September as the fish move north. The key locator is the thermocline edge — see below.
US East Coast: Waters off the Carolinas and New Jersey in late summer (August–September) hold albacore, though this is a smaller and less consistent fishery than the West Coast.
International: New Zealand and Australia host large albacore schools year-round in their respective seasons. Portuguese waters (Azores, mainland coast) support significant albacore fisheries and are among the source waters for premium conserva-grade tinned albacore.
Albacore are a warm-water species but they do not simply concentrate in the warmest water — they concentrate along the boundary between cold upwelling water and warm surface water (the thermocline edge or temperature break). This is where baitfish (sardines, anchovies, squid) aggregate, which is where albacore feed. Target water temperatures of 60–68°F specifically at this boundary. Water significantly warmer or colder than this range is generally unproductive. Modern fish finders and SST (sea surface temperature) charts — available from NOAA and several commercial services — allow you to identify temperature breaks from port before departure, dramatically reducing search time offshore.
Additional surface indicators: diving birds (particularly shearwaters and terns) indicate active baitfish schools; surface foam lines and color changes mark current boundaries where temperature breaks occur; floating kelp paddies in Southern California waters often hold baitfish and attract tuna underneath.
Trolling is the most productive and beginner-accessible method. Run daisy chains, cedar plugs, or plastic squid rigs at 6–8 knots in a spread pattern behind the boat. When a fish strikes, stop the boat immediately — if albacore are schooling, stopping allows other rods to be deployed and multiple fish to be caught from the same school. Running away from a school after the first strike is the most common beginner mistake.
Live bait is the highest-conversion technique once fish are located. Anchovies and sardines are the preferred baits. Use a circle hook rather than a J-hook — circle hooks are significantly more effective for albacore, produce fewer gut-hooks, and improve survival for any fish released. Keep live bait in a well-aerated tank; dead or lethargic bait produces far fewer strikes.
Chunking creates a chum line of cut bait drifting behind a stationary or slow-drifting boat. Effective when fish are near the surface but not aggressively feeding; the chum trail draws fish to the boat. Use sardine or mackerel chunks; deploy a piece of unweighted cut bait on a fluorocarbon leader into the chum line.
Vertical jigging with metal jigs (shiny, baitfish-profile) works for deep-feeding fish located on sonar. Best when surface techniques are not producing. Jig weight selected to match the depth and current.
Medium-heavy spinning or conventional rod (20–40 lb class); high-capacity reel with smooth drag (albacore make long, fast runs). Braided mainline (50–65 lb) with a 30–40 lb fluorocarbon leader — fluorocarbon is nearly invisible underwater and abrasion-resistant. For live bait, use the lightest leader that will hold the fish; excessively heavy leader reduces bait action and suppresses strikes.
The quality of albacore at the table is determined almost entirely by how the fish is handled in the first 30 minutes after capture, not by how it is cooked. Three steps are non-negotiable for premium quality:
1. Bleed immediately. Cut the gill arch on both sides as soon as the fish is boated and place it head-down in a bucket of seawater for 3–5 minutes. This is the single most important step. Albacore are a high-activity fish with a large volume of blood; an unbled albacore has lactic acid and blood pooled through the flesh that produces a metallic, gamey flavor and dark discoloration that cannot be corrected in cooking or processing. A properly bled albacore has light, clean, mild flesh. This is the same practice used by the premium Japanese tuna fisheries (ikejime) and by the Portuguese conserva industry for tinned product.
2. Ice immediately after bleeding. Place the bled fish on ice or in an ice slurry (saltwater and ice in a cooler) immediately. Albacore deteriorate faster than most fish at ambient temperature due to their high fat content. Target holding temperature of 32–34°F. An ice slurry cools the fish faster than dry ice contact alone.
3. Fillet within a few hours. Process the fish the same day if possible. For sashimi-quality albacore, fillet, wrap tightly in clean cloth, and refrigerate for 24–48 hours before cutting — a brief dry-age improves texture and concentrates flavor.
North Pacific albacore caught by US West Coast troll and pole-and-line vessels is generally well-managed and considered a sustainable choice by Monterey Bay Aquarium Seafood Watch. Longline-caught albacore has higher bycatch rates and is rated less favorably. When purchasing rather than catching, look for troll- or pole-caught albacore on the label. Follow local catch limits and size regulations. Circle hooks for live bait fishing reduce bycatch mortality significantly.
