Dungeness crab is one of the most commercially important and widely recognized seafood species on the Pacific Coast, but most people who eat it know relatively little about the animal itself. The biology, behavior, and ecology of Metacarcinus magister are genuinely interesting β and understanding them makes the sustainability regulations (and the reasons for them) much easier to understand. Here are 15 facts worth knowing.

1. Dungeness crabs can live up to 10 years. Most commercially harvested males are 4β6 years old when caught. Females, which are protected from harvest, can live longer and produce multiple broods over their lifetime.
2. They molt (shed their shell) every year when young, and less frequently as adults. Molting is how crabs grow β the old shell splits along the back, the crab backs out of it, and the new soft shell hardens over the following days to weeks. During this period, the crab is extremely vulnerable to predators and is not legally harvestable. The commercial season is closed during the primary molting period (late spring through summer) specifically to protect molting crabs.
3. A Dungeness crab can increase its body size by approximately 25β33% with each molt. This rapid growth rate is why the minimum size limit (5ΒΎ inches across the shell in California and Oregon) is effective β a crab that is just below the legal size will reach legal size after one more molt, typically within a year.
4. The largest recorded Dungeness crabs have measured over 10 inches across the shell and weighed over 4 lbs. The average commercially harvested male is 6β8 inches across and weighs 1.5β3 lbs. The species is most abundant from Northern California to British Columbia. South of Point Conception (near Santa Barbara), water temperatures are generally too warm for large populations to establish.
13. They prefer sandy or muddy substrates at depths of 10β300 feet, though they are most commonly found in 10β50 feet in bays and estuaries and 50β150 feet in open coastal waters. 15. The name "Dungeness" comes from a small fishing village on the Strait of Juan de Fuca in Washington state, named by Royal Navy Captain George Vancouver in 1792 after Dungeness in Kent, England. The village gave its name to the crab species when commercial fishing began in the area in the mid-1800s. The scientific name Metacarcinus magister β formerly Cancer magister until a 2009 reclassification β means "master crab."

During molting, the old shell splits along the back, the crab backs out of it, and the new soft shell hardens over the following days to weeks. During this period, the crab is extremely vulnerable to predators and has very little meat (the body is mostly water as the new shell fills in). The commercial season is closed during the primary molting period (late spring through summer) for two reasons: (1) soft-shell crabs are not legally harvestable and have poor meat yield; (2) the crabs are at their most vulnerable and harvest during this period would cause disproportionate mortality. The season opens in late fall/winter when the crabs have hardened their new shells and are at peak meat condition.
